Mediterranean Chickpea Chili

September 28, 2012 by jessfuel 3 Comments

Since Nick was in Austin for most of last week, I took it as an opportunity to make a meat-free meal. I have a long back-log of vegetarian and meat-free recipes that I’d love to try, but rarely do I get the chance since they don’t always go over big with the meatatarian. He’s pretty…

Hot & Sour Soup

June 10, 2012 by jessfuel 19 Comments

Who gets a cold in the middle of a 90 degree week? This girl, apparently. I can hardly remember the last time I had a cold, nevermind the last time I had a please-just-kill-me-now-and-put-me-out-of-my-misery kind of cold. I blame 4 days of partying on vacation followed by 12 hours of traveling in enclosed spaces. In…

Crock Pot Chili

April 24, 2012 by jessfuel 5 Comments

Whenever I ask Nick what he wants me to make for dinner (or lunch), 9 out of 10 times his answer is chili. I’ve made a zillion chili’s, but since I only recently got my Crock Pot, I’ve never made a slow cooker chili! So this weekend, it was time. Before I get to the…

Lasagna Soup

February 23, 2012 by jessfuel 1 Comment

I’m always really intrigued by recipes that take one food and transform it into a different food. Like buffalo chicken burgers, chicken tamale casserole, enchilada meatloaf, crab rangoon dip, carrot cake pancakes. You get the idea. There’s something fun about preparing a familiar food in a new and interesting way. Lasagna soup definitely fell into…

Meaty Portobello Chili

January 23, 2012 by jessfuel 2 Comments

Pulse mushrooms in a food processor until finely chopped. In a large skillet, heat 1 tbsp olive oil over medium heat. Add the mushrooms and cook, stirring occasionally, until browned, about 10 minutes. Season with salt and pepper. Meanwhile, heat the remaining 1 tbsp olive oil over medium heat. Add the onion and cook, stirring, until golden, about 5 minutes. Add the chili powder and cumin and cook, stirring, for 1 minute. Add the ground meat and cook, breaking up the meat, until no longer pink, about 3 minutes. Stir the mushrooms, tomatoes, black beans and chickpeas into the chili. Partially cover and simmer until thickened, about 15 minutes. Serve with warm cornbread, cold beer, and sweet, sweet victory!

This Meaty Portobello Chili is sure to please both meat lovers and veggie fanatics alike– made with ground beef, it’s bulked up with ground portobello mushrooms for a savory and satisfying yet nutritious meal! Tornado sirens. Not something you want to hear at 2:30 am. I thought we left that behind in Oklahoma, but I…

Sweet Potato and Corn Chowder

December 12, 2011 by jessfuel Leave a Comment

It’s not too often I post vegetarian recipes on here. I get way too many complaints from the meatarian if I dare make too many meals without any meat in them. But every once in a while I find myself home alone, and seize the opportunity to veg it up. Right after we arrived in…

Shrimp and Clam Cioppino

October 25, 2011 by jessfuel 1 Comment

A while back, when we were still living in Pensacola, I briefly mentioned an awesome fish market that we had there and frequently visited. It’s one of the things we miss most about that city. Last week, Nick had to go to Pensacola for a couple days to do some Navy stuff. He brought me…

Chicken-Corn Chili

October 17, 2011 by jessfuel 4 Comments

Happy Monday! We had a bit of a busy weekend, so today’s post is going to be a quick (but good!) one. I’ve made my fair share of chili’s in the past, but a white one has never been on the menu. Since chili is one of Nick’s favorite meals, when I saw this white…
