This Blueberry Muffin Baked Oatmeal is a great make-ahead breakfast that’s easy to meal prep. Packed with fiber and healthy fats, it will keep you full all morning!
I haven’t been very creative with breakfast lately, so I decided to change that this morning. Blueberry muffins are one of my go-to’s, but (depending on how you make them) they aren’t always the healthiest.
So I thought I’d take the flavors of yummy bakery blueberry muffin and put them into some oatmeal! I love making baked oatmeal as a great meal prep breakfast for the week.
You can mix up the fruits and nuts in this recipe for endless combinations. Usually I make an almond pear baked oatmeal, with pears instead of blueberries and almond extract instead of vanilla.
You could use raisins and walnuts, apples and pecans… I happened to have blueberries, so that’s what I used. Which turned out pretty awesome, because this little bake tasted exactly like a big blueberry muffin, but 10 times healthier.
This blueberry oatmeal bake is such a great way to pack in tons of nutrients first thing in the morning. It’s loaded with fiber, calcium, and healthy fats from the almonds and chia seeds. I use whole milk, or sometimes coconut milk, but you can use whatever is your favorite.
If you want to make it even more like a muffin, sprinkle a little sugar on top before baking, to give it that nice crackly shell. If I refrigerate and reheat the oatmeal, I always pour a little a milk on top before sticking it in the microwave to keep it nice and moist. Yum!
- 1½ cups old fashioned rolled oats
- ⅓ cup light brown sugar
- 1 tsp baking powder
- 1 tsp cinnamon
- ½ tsp salt
- ¾ cup milk
- 2 eggs
- 1 tsp vanilla extract
- 2 tbsp chia seeds (optional)
- ¼ cup almonds, chopped
- ½ cup blueberries, fresh or frozen
- Preheat the oven to 350 degrees. Spray a 9-inch pie dish or 8x8 casserole dish with nonstick spray and set aside.
- In a large bowl, combine oats, brown sugar, baking powder, cinnamon and salt.
- Add the milk, eggs and vanilla, and mix well.
- Stir in chia seeds, almonds and blueberries.
- Pour into baking dish and cover with foil.
- Bake for 30 minutes, remove foil and continue to bake an additional 5 minutes.
- Cool slightly and enjoy!
