When we were in Missouri over the 4th of July weekend, Kelly made us lots and lots of good food. Since she reads the blog and knows about my recent quinoa obsession, she was awesome enough to make one particular dish she knew I’d like: Waldorf Quinoa Salad.
Of course I loved it! Besides my love of quinoa, I also have a huge sweet tooth and can never go wrong with the sweet & savory combo… so this was the perfect side dish to some build-your-own turkey sandwiches. I loved this salad so much, in fact, that I couldn’t wait to make it again once I got home!
I’ve been eating this nonstop for the past few days. Even for breakfast. Hey, apples and yogurt… it works. If you’re the type who likes grapes in your chicken salad, raisins in your tuna, or mangoes in your salsa— this one’s for you.
Waldorf Quinoa Salad
- 1 cup apple juice
- 1 cup water
- 1/2 tsp cinnamon
- 1/8 tsp nutmeg
- 1 cup quinoa
- 3 apples, diced
- 3/4 cup celery, chopped
- 1/2 cup raisins or dried cherries
- 2/3 cup walnuts
- 1 cup nonfat vanilla yogurt
Place apple juice, water, cinnamon, nutmeg, and quinoa in a saucepan and bring to a boil. Reduce heat, cover, and simmer until the liquid is absorbed, about 15 minutes.
Transfer quinoa to a large bowl and refrigerate to cool. Once quinoa is cool, add apples, celery, raisins and walnuts.
Toss together, then fold in yogurt.
Serve chilled and have a fabulous Monday! 🙂
