When I shared yesterday’s Hungry-Girl inspired Greek Turkey Burgers, I mentioned that I rarely find any recipes in the daily emails that I deem worthy. Oddly enough, in the grilling-themed email where I found the burgers, I also found another recipe that caught my eye. Spiced grilled veggie skewers!
The original recipe called for butternut squash, but A. I hate cutting butternut squashes, and B. they’re not really in season. So I used summer squash instead! Definitely a different flavor, but the spices still worked really well.
Spiced Grilled Veggies
(adapted from Hungry-Girl)
makes about 6 servings
- 1 tsp cumin
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp cayenne pepper
- oil spritzer or nonstick spray
- 3 large summer squash
- 2 onions
- 1 pint cherry tomatoes
Combine spices in a bowl and set aside.
Chop the squash and onions and slide them onto the skewers along with the tomatoes. (If you use wooden ones, soak them in water first so they don’t burn).
Spritz the veggies with olive or vegetable oil (or nonstick spray if you don’t have a handy dandy Misto). Then sprinkle each side with spices.
Grill the veggies over medium heat for about 8 minutes on each side.
Pull the veggies off the sticks and serve!
The veggies were cooked perfectly and the spices were awesome, especially the little kick the cayenne gave them! Glad we have a long summer of grilling ahead of us!
