Key West Grilled Chicken Skewers

I love spring/summer weather. I say spring/summer because spring weather here is like summer weather back home. Low 80’s every day? I’ll take it! I use every excuse possible to be outside. Less gym and more running in the sun. Lots of walks for Kaiser. And we’re taking another (more successful) stab at gardening this year! When I find myself still outside as 5:30ish rolls around, something magical starts to happen. Delicious smells. Wafting in from all directions. Yes, that’s right. Grilling season is back in full force.

Lately, all I’ve wanted to do is grill up dinner. (Or more precisely, sit around enjoying the weather while Nick grills up dinner for me.) There’s just something so relaxing about sitting in the warm breeze at dusk, smelling delicious smells, and enjoying the outdoors. A glass of wine in hand doesn’t hurt either.

We’ve been having a lot of burgers and even a few hot dogs. Easy peasy stuff. But I decided it was time for something more adventurous. This chicken sounded delicious and anything that reminds me of Florida has to be good.

Key West Grilled Chicken Skewers

(adapted from Grocery Budget 101)

  • 1/4 cup soy sauce
  • 3 tbsp honey
  • 2 tbsp vegetable oil
  • Juice of 1 1/2 limes
  • 4 garlic cloves, minced
  • 2 tbsp chopped fresh cilantro
  • 3 large boneless, skinless chicken breasts (about 2 lbs)

Combine soy sauce, honey, oil, lime juice, garlic and cilantro in a small bowl.

Cut chicken in 1-inch cubes. Place chicken in a large Ziploc bag and pour marinade over chicken. Seal bag and marinate in the fridge at least 30 minutes (I did it for 2 hours and it was perfect).

Heat grill to medium-high. Pierce chicken pieces onto metal or wooden skewers.

Grill chicken 6 to 8 minutes on each side, until cooked through.

Enjoy the deliciousness!

The chicken was awesome… exactly what I was craving from the grill. The marinade really worked it’s magic and you could distinctly taste all the different flavors. Definitely a keeper!
