These Coconut Banana Pancakes are dairy-free and vegan, and super moist and flavorful. Made with 4 different coconut products, they'll transport you to a tropical paradise right in your own kitchen! Ahh, pancakes. We eat a lot of pancakes around here, and we never get sick of pancakes. They're one of our favorite parts of the weekend. Especially when they involve yummy things like banana and coconut. I would say our favorite standard pancakes are a classic chocolate chip. But sometimes we like to mix it up and try some fun add-ins. We've done lots of pancake variations-- … [Read More...]

Pineapple Upside-Down Cake

February 26, 2012 By jessfuel 1 Comment

Last week I got a rare night off from cooking AND cleaning! In honor of my birthday, Nick made dinner for me and even did the dishes! Though I usually do most of the cooking (because I love to do it), Nick is actually quite a good cook. It was nice to sit back with…

Lasagna Soup

February 23, 2012 By jessfuel 1 Comment

I’m always really intrigued by recipes that take one food and transform it into a different food. Like buffalo chicken burgers, chicken tamale casserole, enchilada meatloaf, crab rangoon dip, carrot cake pancakes. You get the idea. There’s something fun about preparing a familiar food in a new and interesting way. Lasagna soup definitely fell into…

Banana Fig Breakfast Bars

February 21, 2012 By jessfuel 1 Comment

I can never understand why the brown spotted bananas are considered bad and are always on sale. The brown spotted ones are the best ones! You can actually eat them when you buy them. If you buy the “good,” full-priced bananas, you’ve got to wait a week before they’re ripe enough to eat. I’ve been…

Carrot Cake Pancakes

February 16, 2012 By jessfuel 3 Comments

Cake for breakfast? Yes, please! Running for the First Aid kit first thing in the morning? No, thank you. Grating carrots before your first cup of coffee might be a little dangerous. I may or may not know that from experience. But if you can pull yourself out of that morning haze and be careful,…

Beer Battered Fish Tacos with Tomato Avocado Salsa

February 10, 2012 By jessfuel Leave a Comment

I’ve mentioned a couple times now that a month or two ago (has it really been that long?), Nick went to California for some training and came back with pounds of moose, deer and halibut from his aunt to stock our freezer. Well, this week, Nick had a buddy going out there and enlisted him…

Chicken with Sausage, White Wine and Artichokes

February 8, 2012 By jessfuel Leave a Comment

Whenever my Dad sends me a recipe, I KNOW it’s going to be a good one! I don’t think he’s ever made a thing I didn’t love. Artichokes have been one of my favorite foods since childhood (I know, weird), so when my Dad saw this recipe with artichokes for me and lots of meat…
