These Coconut Banana Pancakes are dairy-free and vegan, and super moist and flavorful. Made with 4 different coconut products, they'll transport you to a tropical paradise right in your own kitchen! Ahh, pancakes. We eat a lot of pancakes around here, and we never get sick of pancakes. They're one of our favorite parts of the weekend. Especially when they involve yummy things like banana and coconut. I would say our favorite standard pancakes are a classic chocolate chip. But sometimes we like to mix it up and try some fun add-ins. We've done lots of pancake variations-- … [Read More...]

Key West Grilled Chicken Skewers

I love spring/summer weather. I say spring/summer because spring weather here is like summer weather back home. Low 80’s every day? I’ll take it! I use every excuse possible to be outside. Less gym and more running in the sun. Lots of walks for Kaiser. And we’re taking another (more successful) stab at gardening this…

Enchilada Stuffed Shells

March 28, 2012 By jessfuel 1 Comment

I love Mexican food. I love Italian food. And when their powers combine… Enchilada Stuffed Shells! Nothing about these sounded bad. Shells filled with meat and refried beans, covered in enchilada sauce and smothered in melted cheese? Mmmm. They were amazing. Enchilada Stuffed Shells (adapted from BlogChef.net) 15 jumbo pasta shells 1 lb ground beef…

Ginger-Lime Sugar Cookies

March 27, 2012 By jessfuel Leave a Comment

Typically I like my desserts full of chocolate and peanut butter. But with warm weather and summer just around the corner, it’s nice to mix it up with something light and fruity too. These Ginger-Lime Sugar Cookies were the perfect way to welcome spring! If anyone ever hacked my email, they’d probably picture me as…

I really don’t like people who say they like the rain. They are either liars or have a screw loose somewhere up in their brains. I hate the rain. It’s depressing, makes me sleepy, makes me cold. I could really do without rain. It’s been raining for a couple days here now, and I am…

Though I normally enjoy grocery shopping, sometimes after a day at work, even though there’s a supermarket right on my way home, I just don’t feel like stopping. This was a meal I managed to make on one of those days, with things from my pantry, fridge and freezer. It was sort of a throw-together…

Chocolate Cake with Peanut Butter Buttercream Frosting

March 18, 2012 By jessfuel Leave a Comment

Is there anything better than chocolate and peanut butter? I highly doubt it. I was curious about the genius who created the most iconic chocolate peanut butter combo, the Reese’s Peanut Butter Cup. (Genius might be an understatement.) According to Wikipedia, Reese’s Peanut Butter Cups were created in 1923 by H. B. Reese, a former…

Seared Scallops with Wilted Spinach and Lemon Risotto

I think you’re officially a fat kid when you base your vacations and trips around food. My family has always done this (don’t judge) and now it’s been passed down to me. Luckily Nick is the same way, so it works out! Before we even left for our trip to Pensacola last weekend, we knew…

Buffalo Chicken Quinoa Mac and Cheese

March 15, 2012 By jessfuel 2 Comments

Buffalo chicken. Quinoa. Mac and cheese. Have you ever heard so many glorious words together at once? My love for buffalo chicken is no secret. Nor is my obsession with quinoa. Throw in some mac and cheese? Sure, why not! When I saw this recipe, I was immediately drooling, and managed to wait only about…
