As far as I’m concerned, going to a restaurant on the most crowded night of the year is not so fun. So how about surprising your Valentine with a decadent at-home steakhouse-esque meal? Might I suggest some grilled filets with caramelized onions, roasted asparagus, and goat cheese and bacon twice-baked potatoes?
I made this meal as a special Friday night treat. It cost me about $25 to make this meal at home, which seems a bit pricey, but when you consider that it would be at LEAST double that to have it at a restaurant, it doesn’t sound so bad! The best part about making it at home is you can both enjoy your $7 bottle of wine (which you didn’t pay $27 for) and not have to worry about who’s driving home!
The original recipe made 8 stuffed potato halves, but since I was only cooking for 2, I adjusted it to make 3.
Goat Cheese and Bacon Twice-Baked Potatoes
(adapted from Cooking Light)
makes 3 stuffed potato halves
- 2 large baking potatoes
- 2/3 cup low-fat buttermilk
- 1/4 cup crumbled goat cheese
- 3 scallions, finely chopped
- 1 tbsp butter
- 1/4 tsp salt
- fresh ground pepper, to taste
- 2 bacon slices, cooked and crumbled
Preheat oven to 375°. Bake potatoes for 1 hour or until tender. Cool 10 minutes or until cool enough to handle. Cut each potato in half lengthwise and scoop out pulp, leaving a 1/4-inch-thick shell. (You will only use 3 shells, so you can scoop EVERYTHING from the fourth).
Place potato pulp and remaining ingredients in a bowl and beat with a mixer at medium speed until well blended.
Evenly distribute potato mixture between 3 of the potato shells. Arrange stuffed shells on a baking sheet.
Bake at 375° for 20 minutes or until thoroughly heated.
The potatoes were awesome! As were the steaks, of course. The meal satisfied our steakhouse craving and was just as good, if not better, than any meal we could have gone out for. These potatoes would be a perfect side to any romantic Valentine’s meal!
