These Coconut Banana Pancakes are dairy-free and vegan, and super moist and flavorful. Made with 4 different coconut products, they'll transport you to a tropical paradise right in your own kitchen! Ahh, pancakes. We eat a lot of pancakes around here, and we never get sick of pancakes. They're one of our favorite parts of the weekend. Especially when they involve yummy things like banana and coconut. I would say our favorite standard pancakes are a classic chocolate chip. But sometimes we like to mix it up and try some fun add-ins. We've done lots of pancake variations-- … [Read More...]

Chubby Hubby Truffles

June 15, 2012 By jessfuel 1 Comment

There are few things in this world better than chocolate and peanut butter. Chocolate, peanut butter and pretzels might just be one of them. Hailing from the Northeast, I grew up thinking (correctly) that Ben & Jerry’s was just about the best ice cream in the world. Especially when it comes to kooky flavor combinations,…

Corn and Roasted Jalapeno Hummus

June 11, 2012 By jessfuel 5 Comments

I was quite the busy bee in the kitchen this weekend! Nick left me for Virginia, so it was just me, the animals, and my lovely kitchen. It was technically a trip for “work,” but I don’t think he did too much working. His job has some fun perks and one of them is getting…

Hot & Sour Soup

June 10, 2012 By jessfuel 13 Comments

Who gets a cold in the middle of a 90 degree week? This girl, apparently. I can hardly remember the last time I had a cold, nevermind the last time I had a please-just-kill-me-now-and-put-me-out-of-my-misery kind of cold. I blame 4 days of partying on vacation followed by 12 hours of traveling in enclosed spaces. In…

Crock Pot Wine & Tomato Braised Chicken

June 8, 2012 By jessfuel Leave a Comment

The Crock Pot is back in action and this is a good one! I mean, could anything slow cooked in wine for 6 hours really be bad? Wine makes everything better! There were tons of delicious flavors going on in this dish, and the chicken was super tender and just fell off the bone. The…

Lemon Dewberry Muffins

June 5, 2012 By jessfuel 8 Comments

Have you ever heard of a dewberry? If you aren’t from Texas, Mississippi or some other super Southern state, you probably haven’t. Until a couple months ago, I hadn’t either. One day, while out on a run, Nick spotted a thorny plant reminiscent of a blackberry bush, with tiny red berries on it. How he…

Chicken and White Bean Stuffed Peppers

June 4, 2012 By jessfuel 1 Comment

This is a great light & healthy meal for when you need to ween yourself off of 4 days of all-you-can-eat buffets. All-you-can-eat buffets, unlimited mojitos and pina coladas, and a weekend devoid of anything even closely resembling physical activity (actually, maybe dancing counts?). Despite feeling slightly gluttonous all weekend, we had a great Bahamas…

A Crawfish Boil & Etouffee

June 1, 2012 By jessfuel 7 Comments

I like living in Mississippi. It’s no San Diego or Hawaii, but it’s also a far cry from Oklahoma, and that is something I can get behind. A couple weeks ago, we had a big ol’ crawfish boil, which I believe officially deemed us honorary Southerners. When in Mississippi! It started out innocently enough. The…

Banana Oatmeal Pancakes

May 30, 2012 By jessfuel Leave a Comment

Another morning, another pancake. Seriously, I wonder if I will ever get sick of pancakes? With endless possibilities for different kinds of pancakes… probably not. These ones pack a filling punch from oatmeal and whole wheat flour, yet are light, fluffy, and a bit sweet from the ‘nanas. Banana Oatmeal Pancakes 1/2 cup all-purpose flour…
