Another morning, another pancake.
Seriously, I wonder if I will ever get sick of pancakes? With endless possibilities for different kinds of pancakes… probably not.
These ones pack a filling punch from oatmeal and whole wheat flour, yet are light, fluffy, and a bit sweet from the ‘nanas.
Banana Oatmeal Pancakes
- 1/2 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1/2 tsp salt
- 2 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 cup quick-cooking oats
- 1 egg, lightly beaten
- 1 cup milk
- 1 tbsp vegetable oil
- 2 tbsp brown sugar
- 1 cup mashed ripe bananas
In a mixing bowl, combine flours, salt, baking powder, cinnamon, nutmeg and oats. In another bowl, combine remaining ingredients. Pour wet ingredients into dry and stir until just combined.
Heat a large skillet over medium heat. Spray or butter the pan. Pour a ladle-full of batter into the pan. When the top begins to bubble, flip the pancake and cook another minute or 2, until both sides are golden brown.
Serve with syrup and extra bananas!
These pancakes were hearty yet fluffy. I loved the chunks of bananas right inside. I thought these were a particularly good batch, and Nick must have too… he didn’t even miss eggs and bacon!
