I’m all about the healthy snacking lately. With all my recent travel and a somewhat sporadic hectic schedule, I don’t always have time to fit in traditional meals. So I eat a lot of snacks. I’ve been trying to keep it healthy and filling with things like nuts and trail mix, but those can get boring pretty quickly. I’m sort of still in sugar-overload-mode from all the 50% off Easter candy I bought this year, so I was on the hunt for some filling savory snacks. When I was shopping in Walmart the other day, I found myself standing in front of the cracker aisle and thinking up delicious ways to top them! There were a ton of different Ritz® cracker varieties, including Whole Wheat and Roasted Vegetable, but I decided to stick with the classic. You can’t go wrong with the crisp, buttery little bites.

To top my Ritz® crackers, I wanted to create something easy, and something that I usually have all the ingredients on hand for. Since we eat lots of salads, I always keep things like tuna, olives, chickpeas and jarred artichokes in my pantry. They’re also some of my favorite foods! I love all the salty Mediterranean flavors. I thought they’d all combine wonderfully in a unique tuna salad that would be perfect for spooning on top of crispy crackers.

I love that this salad is easy to prepare, healthy (veggies, fiber, good fats and protein!) and stores in the fridge for quite a while. You can make it over the weekend and have it in the fridge for topping crackers all week.

This salad is really customizable, too. If you aren’t into mayo, you could easily use Greek yogurt instead. You could also swap out the Kalamata olives for green or black ones. I used solid white albacore because I think the meaty texture goes well with the Mediterranean flavors, but you could use any kind of tuna you like. And if you don’t have chickpeas, you could use any kind of white beans.

Mediterranean Tuna Salad on Ritz® Crackers

Serves: 2-4
Ingredients
  • 1 (5 oz) can solid white albacore tuna
  • ¼ cup Kalamata olives, quartered
  • ¼ cup chickpeas, rinsed and drained
  • ¼ cup roughly chopped marinated artichoke hearts
  • 1-2 tbsp mayo
  • 1 sleeve Ritz® crackers
Instructions
  1. Flake the tuna out of the can into a medium bowl.
  2. Add olives, chick peas and artichoke hearts, and toss to combine.
  3. Add the mayo (more or less depending on your taste) and stir everything together until the salad comes together and is evenly coated.
  4. Spoon salad onto Ritz® crackers and serve!

This has been such a perfect snack! It’s really satisfying, so I’m not reaching into the chip bags all day long. The salty olives and crispy crackers kick my snack cravings, while the tuna and chickpeas fill me up and sustain me all day. Having this ready to go in the fridge makes it just as easy to reach for as the bag of trail mix. I definitely be making this tuna salad again!

    looks delicious!!!!

    I recently made a tuna salad where I swapped out the mayo (because it was right before Weigh-in for Weight Watchers), and instead I used a little red wine vinegar and a touch of olive oil, along with shredded carrots, onions and sweet pepper. I added a bit of lemon juice too and I have to tell you……I was shocked by how good it was!

    I’m all about healthy snacks too, especially when I always seem to overindulge in sweets! I love the toppings on these crackers, Jess! Such a great idea! And tuna is my favorite, so these would be gone in no time!

    For some reason I thought the olives were cherries at first and I was like “hmmm…innnnnteresting”, but olives, I can totally get on board with…ha ha! Love ritz crackers, and this looks like the most perfect and healthy snack!
