I’ve always loved the combination of sweet & salty. Chocolate covered pretzels? Yes, please! Dunkin’ Donuts everything bagels with strawberry cream cheese? You betcha. Margaritas? Mmmmm. So when Nick’s Aunt Diane sent me a recipe for Strawberry Salsa, I jumped right on it!
Though Nick questions some of my salty/sweet combos, I was pretty sure the salsa would be a hit. I’ve made mango salsa and raspberry peach salsa before, but strawberry was a new one, and it sounded delicious.
Strawberry Salsa
- 2 cups finely chopped strawberries
- 2 jalapenos, finely chopped
- 1/2 cup red onion, finely chopped (I left this out)
- 1/4 cup cilantro, finely chopped
- juice of 1/2 lime
- 1/2 tsp salt
- 1 tsp sugar
Throw everything together in a bowl.
Toss!
I served the salsa on top of some white fish, per one of Aunt Diane’s suggestions.
The salsa was delicious! The fish, on the other hand… not so good. It was horrible and fishy and even the salsa couldn’t make it taste good. That’s what I get for trying to buy fish in Oklahoma. I really couldn’t even eat it, so I salvaged the salsa and pulled out a bag of tortilla chips.
Now THAT was a good dinner! I left out the onion since Nick can’t eat them raw. I wasn’t sure if the salsa would be missing something without it, but we both still loved it! I wanted to add avocado, but the ones at the store were rock hard. I’ll definitely have to make it again when the avocados are ripe. I’m sticking with the chips though, and probably refraining from buying fish for the remainder of my Oklahoma adventure!
