Another holiday is just around the corner, and you know what that means… An excuse to bake some festive sweets! It’s all about green! When I think green, I think mint. Mint Chocolate Chip just happens to be one of my favorite ice cream flavors, but I’m not sure I’m really up to making my own ice cream… yet. So I decided to try mint chocolate chip in another form: cookies!

I thought it necessary to top off the weekend with some St. Patrick’s Day Cookies. Luckily you have til Thursday… so get baking!
This recipe is based off the original Tollhouse cookie recipe, but with some minty modifications.
Mint Chocolate Chip Cookies
- 1 cup + 2 tbsp all purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup (1 stick) butter, softened
- 1/4 cup brown sugar
- 1/3 cup granulated sugar
- 1 large egg
- 1/4 tsp peppermint extract
- 1/2 cup chocolate chips
- 1/2 cup Andes mints, chopped
- 10-15 drops green food coloring (optional)
Preheat the oven to 375 degrees. Mix the flour, baking soda and salt in a medium mixing bowl.
In a large mixing bowl, cream together the butter and both sugars.
Then beat in the egg and peppermint extract.
Once everything is mixed pretty well, beat in the food coloring. This isn’t necessary if you don’t like to eat bright green cookies, but I think it makes them more fun and festive. 🙂
Not green enough for my liking, so I added more.
Now mix in the chocolate chips and Andes mints with a spatula or spoon. Isn’t it pretty?
Drop heaping tablespoons onto an ungreased cookie sheet. This supposedly makes 2 dozen cookies, but I got 15… I think Tollhouse and I have different ideas of what a cookie should look like.
Bake 8 to 10 minutes.
Ok, so these aren’t the prettiest cookies in the world, but MAN are they delicious. They taste just like mint chip ice cream, in cookie form. I’m not sure why they spread out so much. Next time I might chill the batter before baking and see if that helps at all. Look, a clover for St. Patty’s! (I’ll pretend it was intentional).
There actually is one major problem with these cookies… 15 cookies dwindled to 3 in one night, and St. Patrick’s Day is still a few days away! Looks like I just might have to make more! They’re way too delicious to last very long.

Baking soda makes them spread.. baking powder more of a rise.
But the spread looks good. Yummy.

Ohhh… interesting. I should probably know that. I guess Nestle just likes flat cookies!

I’m making these tonight for my niece and nephew!!! However, it’ll just be green chocolate chip cookies for them and the mint ones for the adults 🙂
