I’m thinking about renaming this blog Flying on Quinoa. What do you think? I’m sorry, I love the stuff! If you haven’t tried it yet, these pictures probably won’t sell you on it. This may be one of the most unphotogenic foods I’ve made. No matter what I did, I just couldn’t make it look pretty. But it was quite delicious!
Sweet, salty, crunchy, healthy. Mmm, yup. This one’s a winner! My sister emailed this recipe to me, and I was so excited I made it that very night. Love quinoa.
Quinoa, Feta and Walnut Salad
(adapted from Jungle Frog Cooking)
- Â 1 cup dry quinoa
- 1 3/4 cups water
- 1 1/2 tbsp olive oil
- 1 1/2 tbsp lime juice
- 1 tbsp coarse ground mustard
- 1 tbsp honey
- salt & pepper
- 1 apple, diced
- 1/2 cup feta
- 1/4 cup toasted walnuts, roughly chopped
Combine quinoa and water in a small pot over medium-high heat. Bring to a boil, reduce heat to low, cover, and simmer, stirring occasionally, about 15 minutes or until liquid is absorbed. Cool completely.
Meanwhile, in a small bowl (or jar), whisk (or shake) together olive oil, lime juice, mustard, honey, s&p.
Combine cooled quinoa, apple, feta and walnuts.
Toss with dressing and serve.
