These Coconut Banana Pancakes are dairy-free and vegan, and super moist and flavorful. Made with 4 different coconut products, they'll transport you to a tropical paradise right in your own kitchen! Ahh, pancakes. We eat a lot of pancakes around here, and we never get sick of pancakes. They're one of our favorite parts of the weekend. Especially when they involve yummy things like banana and coconut. I would say our favorite standard pancakes are a classic chocolate chip. But sometimes we like to mix it up and try some fun add-ins. We've done lots of pancake variations-- … [Read More...]

Spiced Grilled Veggies

June 1, 2011 By jessfuel 1 Comment

When I shared yesterday’s Hungry-Girl inspired Greek Turkey Burgers, I mentioned that I rarely find any recipes in the daily emails that I deem worthy. Oddly enough, in the grilling-themed email where I found the burgers, I also found another recipe that caught my eye. Spiced grilled veggie skewers! The original recipe called for butternut…

Greek Turkey Burgers with Tzatziki Sauce

May 31, 2011 By jessfuel 12 Comments

As I mentioned yesterday, Nick and I spent Memorial Day weekend camping in the middle of nowhere Oklahoma. It was hot, it was buggy, and the obnoxious rednecks in the campsite next to us stayed up til 3 am yelling at each other over who lost the cap to the vodka bottle. But we were…

Tomato Basil Quinoa Salad

May 27, 2011 By jessfuel 3 Comments

Ok, ok. You’re probably sick of my quinoa salads by now. Kumquat; Cherry Chickpea; Greek… I can’t help it, I love the stuff. And if you haven’t tried it yet, this is just one more reason why you should! The idea for this started with the fresh basil I’ve been growing. My plant had a…

Tequila Lime Salmon

May 25, 2011 By jessfuel 3 Comments

I’m not sure if everyone’s been watching the news lately, but we’ve been having some crazy weather here in Oklahoma this week. Monday night we had bad thunder storms and hail the size of marbles. Apparently this is “small” hail for Oklahoma, but it’s the biggest I’ve ever seen! Last night, we were under a…

Nick finally started class last week. Now that we’re both busy bees and out of the house a lot more, finding time to cook is becoming more challenging. I’m always up for a challenge, though! This weekend Nick had his new classmates over. We kept it simple with burgers and my Asiany coleslaw, but I…

One of my best friends, Erin, recently started a blog! She was always making delicious food and I kept pressuring her to start one… it finally worked! I’m pumped because I love being able to keep up with everything my friends are doing, but I also love finding new recipes! So of course I decided…

Mike Squared Grilled Wings {Sweet & Spicy Grilled Wings}

May 18, 2011 By jessfuel 2 Comments

Today’s recipe comes jointly from 2 of the many Mikes in my life, though they didn’t collaborate on it; they don’t even know each other. I just happen to know a couple Mikes who both love and make great wings. I decided to combine both of their efforts to make something amazing. Mike Squared Grilled…

French Onion Braised Chicken

I get lots and lots of recipe suggestions. Ever since I started the blog, friends and family have been filling my inbox with recipes they’ve made themselves and loved, recipes they think sound great but don’t have the time/effort to make themselves, and  recipes they just think Nick and I will really like! I’ve made…
