These Coconut Banana Pancakes are dairy-free and vegan, and super moist and flavorful. Made with 4 different coconut products, they'll transport you to a tropical paradise right in your own kitchen! Ahh, pancakes. We eat a lot of pancakes around here, and we never get sick of pancakes. They're one of our favorite parts of the weekend. Especially when they involve yummy things like banana and coconut. I would say our favorite standard pancakes are a classic chocolate chip. But sometimes we like to mix it up and try some fun add-ins. We've done lots of pancake variations-- … [Read More...]

Chicken-Corn Chili

October 17, 2011 By jessfuel 3 Comments

This Chicken-Corn Chili is an easy weeknight meal packed with veggies, beans and chicken. Top with cheese and serve with cornbread! I make my fair share of chilis all the time, but it’s not as often that a white chili makes it to the menu. Since chili is one of Nick’s favorite meals, I’m always…

Almond Crusted Bass with Warm Coconut Peanut Sauce

October 13, 2011 By jessfuel 1 Comment

Though Nick often jokes that I won his heart over through his stomach, it’s actually the other way around. That’s how he suckered me in! You see, when I first met Nick, he was quite the cook, always whipping up something new for dinner for 4 or 10 different friends. I remember homemade Thai chicken…

Pumpkin Patch Stuffed Shells

October 11, 2011 By jessfuel 4 Comments

If you think pumpkin is just for breakfast and dessert, you are wrong, wrong, wrong. Pumpkin is just as awesome in savory dishes, like these stuffed shells! OK, so they’re not that photogenic, but I promise they taste 500 times better than they look! My Mom gave me her Rachel Ray magazine to read on…

Nick’s latest batch of beer is a Guinness clone. Though Guinness is not my favorite beer to drink, I have heard a lot about chefs using Guinness in chocolate desserts such a cakes or puddings. I was really excited for this beer to be done, so I could make a Guinness chocolate cake! But then…

Chicken Pot Pie with Biscuit Crust

October 5, 2011 By jessfuel 1 Comment

This is another chilly weather inspired dinner! I don’t think it’s really even that cold out yet, but we still have our A/C cranking, so I’m always freezing. At least now that it’s fall I actually have an excuse for wanting piping hot soup and tea! I was craving something along the lines of chicken…

Buffalo Chicken Dip

October 4, 2011 By jessfuel 4 Comments

This past weekend, Nick’s class had a party to celebrate their solo flights (which actually happened a while ago— slow planners). Since his class is 98% guys, and guys don’t cook (they ordered wings, of course), their better halves were called in to bring appetizers and desserts. I decided to make something I’ve made quite…

Sweet Potato and Lentil Chili with Kielbasa

October 3, 2011 By jessfuel 2 Comments

This chili is so good, it’s even cat-approved! Yes, Cali is a bad cat and begs at the table any time she gets the slightest whiff of cheese, milk, tuna, salmon, chicken… I blame dad for letting her drink out of his cereal bowls. Teaching bad habits! She’s so cute though, how can you really…

Maple Mustard Salmon

I once vowed to never buy fish again in Enid. Don’t worry, I haven’t broken that vow. I wouldn’t dare. However, when we were in Dallas a few weeks ago, we had to buy some fish! We stocked up, put it on ice, and threw it all in the freezer when we got home. I…
