These Coconut Banana Pancakes are dairy-free and vegan, and super moist and flavorful. Made with 4 different coconut products, they'll transport you to a tropical paradise right in your own kitchen! Ahh, pancakes. We eat a lot of pancakes around here, and we never get sick of pancakes. They're one of our favorite parts of the weekend. Especially when they involve yummy things like banana and coconut. I would say our favorite standard pancakes are a classic chocolate chip. But sometimes we like to mix it up and try some fun add-ins. We've done lots of pancake variations-- … [Read More...]

Strawberry Lemon Bars

May 6, 2013 By jessfuel 5 Comments

Lately I’ve been finding myself with tons of fresh (and local) produce. More than I can possibly eat straight up without getting sick of it. A friend of mine has a lemon tree in her backyard and was nice enough to let me pick a bag of lemons from it. I thought it would be…

White Bean & Basil Hummus

April 25, 2013 By jessfuel 7 Comments

This White Bean and Basil Hummus is a yummy summer twist on the classic chickpea dip. The white beans give the dip extra creaminess and the basil, garlic, and lemon add tons of flavor! Ok, it’s “dad joke” time. What’s the difference between black-eyed peas and chickpeas? One will sing us a song and one…

Chicken Broccoli Calzones

Nick goes through phases on what he likes to eat for lunch. Currently, he is sick of sandwiches and only wants dinner leftovers. Which is hard considering a 4-serving meal barely feeds two of us and leftovers are hard to come by! One night I was going to make pizza for us, when I realized…

The other day I was updating my Pinterest visual recipe index pages (you can find the links on my recipe pages), and I noticed something. That I haven’t posted any desserts in way too long. As in, since Christmas! Now, don’t be fooled. It’s not as if I’ve been sticking to any New Years resolutions…

Adventures in Gardening: Let’s Try Again!

April 12, 2013 By jessfuel 6 Comments

Some long-time readers may remember that about 2 years ago, I decided to plant a garden and chronicle it on the blog. And it failed. In a major way. As in… everything died. Well, last year, I decided to try again (or, really Nick did). Since I was expecting it to be another epic failure,…

Sweet Potato Pecan Burgers with Caramelized Onions

April 9, 2013 By jessfuel 4 Comments

Sweet potatoes are a glorious thing. They’re vegetables. But they taste like candy. How can you go wrong with that? They’re 10 times better than regular potatoes, and also a lot more nutritious. Win! There are a lot of weird things about California, and one of them is sweet potatoes. I went to the supermarket…

Black Bean and Quinoa Enchiladas

April 3, 2013 By jessfuel 10 Comments

Somehow, I’m still not sick of avocados. Or Mexican food. I pinned this recipe a while ago, but hadn’t made it since it’s vegetarian (minus the chicken stock, which could easily be replaced by veggie), and my meatatarian would probably be skeptical. But then one night I didn’t feel like going to the supermarket, didn’t…
