These Coconut Banana Pancakes are dairy-free and vegan, and super moist and flavorful. Made with 4 different coconut products, they'll transport you to a tropical paradise right in your own kitchen! Ahh, pancakes. We eat a lot of pancakes around here, and we never get sick of pancakes. They're one of our favorite parts of the weekend. Especially when they involve yummy things like banana and coconut. I would say our favorite standard pancakes are a classic chocolate chip. But sometimes we like to mix it up and try some fun add-ins. We've done lots of pancake variations-- … [Read More...]

Jalapeno Scalloped Corn Casserole

Jalapeno Scalloped Corn

March 11, 2015 By jessfuel 15 Comments

I’m not usually a side dish person. Our meals tend to be either one-pot/casserole type dinners, big salads, or a main meat with simple sides like steamed or roasted veggies. To me, elaborate side dishes seem like a holiday kind of thing (hello, stuffing and sweet potato casserole). But every once in a while, I…

Girl Scout Cookie Thin Mint Truffles

Thin Mint Truffles

March 9, 2015 By jessfuel 30 Comments

It’s that time of year again. Girl Scout cookie time. Did you know the Girl Scouts are actually only allowed to sell their cookies a certain time of year? I guess limiting the availability of cookies makes people so look forward to them that when cookie time comes around they buy an absurd amount of…

Harvest Fridays – The Aquaponic Garden

March 6, 2015 By jessfuel 13 Comments

Happy Friday! Time to check in on the garden. It seems like so much has happened since the last update. When we last left off, we had just finished building the greenhouse and had started to put together the aquaponic system. Now we have finished installing the aquaponic system, started cycling the water, and have…

Orange Creamsicle Cookies

Orange Creamsicle Cookies

March 3, 2015 By jessfuel 18 Comments

I made these cookies the other day and the only time I could really take pictures of them was around noon. If you don’t know a lot about photography, noon on a sunny day (and it’s sunny 362 days a year here) is about the worst possible time you could choose to take pictures. Harsh,…

We are also going to do some work on the garden, of course, and belatedly celebrate my birthday! My birthday was last weekend, but I was out of…

This Italian Sausage and Kale Lasagna is the best kind of comfort food, packed with fresh kale, creamy ricotta and flavorful sausage! This Slow Cooker White Chicken Chili is quick to prep and does all its cooking on its own in the crock pot. It’s the perfect dinner for busy fall sports days! I have rediscovered my slow cooker! When I was working, slow cooker recipes didn’t really work. Most of them call for 6-8 hours of…

Harvest Fridays – Greenhouse Video Tour

February 20, 2015 By jessfuel 9 Comments

Hi friends! I have a special treat for you today. My super duper awesome hubby made a quick little video tour of what we’ve gotten done on our greenhouse so far. I couldn’t make it myself because A. I don’t really know what I’m talking about, and B. I hate hearing my own voice on…
