These Double Peanut Butter Cookies can be made with Reese’s Pieces or peanut butter chips. They’re perfectly crunchy with just a little chew! Sweet, salty and perfect.
My dumb cat gave me a serious scare last week. She’s an indoor cat who has never been outside on her own. I let her in the backyard sometimes because it’s fenced and she’s too much of a scaredy to scale the fence.
She’s never even expressed interest, so I don’t worry about it. But she hasn’t been in the great outside-the-fence outdoors and doesn’t know what cars are, never mind wild animals.
A friend came by the house to drop something off and I went to the driveway to meet her. I closed the front door, but it must not have latched. My friend mentioned that she had seen my cat (she didn’t know she wasn’t allowed outside) and when I went to look, I saw the front door had been cracked open!
That little houdini got out. And we didn’t see her anywhere in the yard.
It was just around 5 and the sun was going down fast. I took the dog and a box of treats and went walking down the street. As it got dark, I recruited a few neighbors to help me search.
I was freaking out, feeling like a horrible cat mom and obviously very, very worried. We all looked for her for AN HOUR AND A HALF. And then I went to stop by the house to drop the dog off and guess what?
She’s just sitting there like oh, hey! Were you looking for me? Here I am!
So then I had to kill her.
Just kidding.
But I kind of wanted to.
So, what do you do when you have a last-minute potluck and your grocery shopping time gets used up by searching for an escapee cat?
You assess your pantry and make cookies with whatever you’ve got!! I always have at least a few different jars of peanut butter on hand, and I just so happened to have some leftover Reese’s Pieces candies from Halloween.
So I decided to throw together some delicious Double Peanut Butter Cookies. Which were amazing. Perfectly crunchy with just a little chew. And the extra peanut butter bits in there really took them over the top!
- 1¼ cups all purpose flour
- ¾ tsp baking soda
- ½ tsp baking powder
- ¼ tsp salt
- 1 stick unsalted butter, room temperature
- 1 cup peanut butter
- ¾ cup sugar
- ½ cup brown sugar
- 1 egg
- 1 tbsp milk
- 1 tsp vanilla extract
- 1 cup Reese's Pieces or peanut butter chips
- Preheat oven to 350 degrees.
- In a medium bowl, combine flour, baking soda & powder, and salt. Set aside.
- Add the butter and peanut butter to the bowl of a mixer. Beat until fluffy, then beat in sugars. Add milk, egg and vanilla and continue beating. Then add the flour mix ½ at a time and mix until everything is combined well.
- Fold in Reese's Pieces with a rubber spatula.
- Drop heaping tablespoon sized balls of dough on a parchment lined cookie sheet. Lightly press a fork on the tops, making a crosshatch pattern.
- Bake 10-15 minutes, until cookies are barely browned on the bottom edges. Don't overbake! Let cool on the pans a few minutes, then transfer to a wire rack.

Oh my gosh, I would definitely be freaking out too! My dog got out of our backyard once, but luckily I figured it out because she kept barking at a squirrel. It scared me to death to think that she could’ve got lost! I’m glad you found her though, that’s all that matters! These cookies look like a perfect way to forget about it too. I love peanut butter anything!

I don’t think any of my cats would be that brave outside. They’d be scratching the door to get back in if I only put them down on the steps. Their natural cat instinct has completely dissolved, I think. 🙂 These cookies look amazing. Pretty much all you had to say was “double peanut butter” and I’m there. They look great!
