I started brainstorming this recipe because I wanted to enter a recipe contest. The secret ingredient? Chili peppers! I was torn between using fresh peppers or pulling out my yummy chipotle chili powder. So I decided to use both.
I’ve been posting my photos and recipes on a site called Food Frenzy for a while now. Check out my gallery on the site. Every month, they have recipe contests, but I’ve never entered one before. Now that I have time, I figured I’d give it a shot!
Chipotle Sausage Stuffed Jalapenos
- 1/2 lb Italian sausage, cooked and crumbled
- 1 (8 oz) package cream cheese
- 1 cup shredded sharp cheddar cheese
- 1 tsp chipotle chili powder
- 1 lb fresh jalapenos, cut in half, seeds and ribs removed
Preheat oven to 425 degrees. In a bowl, mix sausage, cheeses and chili powder. (A mixer works well, but it can be done by hand too.)
Spoon a heaping tablespoon of sausage filling into each jalapeno half and place them on a baking sheet.
Bake 20 minutes, until bubbly and browned. Cool a few minutes before serving!
I fed these to the boys, and they were gone in a matter of seconds. They got lots of compliments. And Nick asked me if they were hard to make (no), which I took to mean, when are you making these again? Jalapeno poppers, revamped. They’re definitely a winner in this house, let’s see if they can win a contest!
