So, some big changes are coming! New year, new project. Since I have some time right now, and haven’t found a job here in Mississippi yet, I’m going to focus on trying to make my blog better! I’m moving the blog from WordPress.com to a self-hosted site on GoDaddy. WordPress.com is very restrictive and doesn’t let you make any changes to their premade layouts, nor do they let you add fun features to posts or in the sidebars. This will be an adventure, as I know close to nothing about web design. Hopefully I will learn as I go and turn this blog into something even more fun and useful.
Before I make the transition, here’s one more recipe for you.
Broiled Halibut with Thai Coconut Curry Sauce
(adapted from Cooking Light)
- 1 tsp sesame oil, divided
- 2 tsp minced peeled fresh ginger
- 2 garlic cloves, minced
- 1 cup finely chopped red bell pepper
- 1 cup chopped green onions
- 1 tsp curry powder
- 2 tsp red curry paste
- 1/2 tsp cumin
- 4 tsp low-sodium soy sauce
- 1 tbsp brown sugar
- 1/2 tsp salt, divided
- 1 (14 oz) can coconut milk
- 2 tbsp chopped fresh cilantro
- 4 (6-ounce) halibut fillets
- cooked rice, for serving
Preheat broiler.
Heat 1/2 tsp oil in a large saute pan over medium heat. Add ginger and garlic and cook 1 minute. Add pepper and onions and cook another 1 minute.
Stir in curry powder, curry paste, and cumin; cook 1 minute. Add soy sauce, sugar, 1/4 tsp salt, and coconut milk, and bring to a simmer (do not boil). Remove from heat; stir in cilantro.
Brush fish with 1/2 tsp oil and sprinkle with 1/4 tsp salt. Place fish on a baking sheet coated with nonstick spray. Broil 7 minutes or until fish flakes easily when tested with a fork. Serve over rice.
Hopefully that one will tide you over for a few days while we move! I’m not sure if the site will be offline at all during the transition process, but if it is, it will be back soon! Fingers crossed and here’s hoping I don’t crash the entire site!
