Halloween is over, it’s finally cool and foggy here, and I’ve decided it’s officially time to break out the holiday candles and start listening to Christmas music. I don’t care if you think it’s too soon. It’s never too soon.

Normally I despise Daylight Savings Time. I love eating dinner in the sun and I hate driving in the dark (in part because I’m blind as a bat), so I like to be tucked into bed just as the sun goes down. But I have to say, babies are a game changer and this year I am quite looking forward to turning the clocks back. Lately we’ve been rising almost 2 hours before the sun and by the time it’s light out I feel like half the day should already have passed. Sweet coos over the baby monitor aren’t quite so sweet when it’s pitch black and chilly out.

Since I don’t have a choice and need to drag my sad butt out of bed these days, the least I can do is reward myself with a delicious cozy breakfast. I’m SO over pumpkin spice. JUST KIDDING. But I’ve also moved on to more wintery spices too. Like chai!

Baked oatmeal is a favorite lately because it’s so easy to make ahead and reheat it for a few days. Plus oatmeal is supposed to help with milk making, so Molly is on board too!

This Chai-Spiced Banana Bread Baked Oatmeal is full of lots of great flavors. I’ve never really been into the fancy seasonal drinks at Starbucks, I’m a plain latte kind of girl. BUT– when the chilly holiday season rolls around and I feel like getting a little festive, I do love a hot chai tea latte every now and then. I love the spicy flavors, and they were really easy to recreate at home in this oatmeal!

Plus, banana bread. Who doesn’t love it? And I always have a few brown bananas hanging around just waiting for me to bake something. So this was a perfect way to use a couple up.

You can serve this oatmeal hot from the oven, or you can refrigerate it and reheat it throughout the week. I splash a little milk or maple syrup on a piece (to keep it nice and moist) and pop it in the microwave. Easy peasy comforting breakfast all week long!

Serves: 6-8
Ingredients
  • 3 cups old fashioned oatmeal
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • ½ tsp ground cardamom
  • ½ tsp ground allspice
  • ½ tsp ground cloves
  • 2 ripe bananas, mashed
  • 2 eggs
  • ¼ cup brown sugar
  • 1 tsp vanilla extract
  • 1½ cups milk
  • ¼ cup butter, melted and cooled slightly
  • ¾ cup roughly chopped pecans (optional)
Instructions
  1. Preheat over to 350 degrees. Spray a 9-inch square baking dish with nonstick spray and set aside.
  2. In a large bowl, mix together oatmeal, baking powder, salt and spices.
  3. In another bowl, whisk together banana, eggs, brown sugar and vanilla. Then whisk in milk and melted butter.
  4. Pour the wet ingredients into the dry and stir until combine. Fold in the pecans.
  5. Pour into prepared baking dish and bake 30-35 minutes until center is set and edges are just beginning to brown.
  6. Let cool 5 minutes, then cut and serve.
