Cheese. It’s probably one of my favorite foods. I love all kinds. Creamy ones, stinky ones, crumbly ones, melty ones.

Three Cheese Jalapeno Dip

October in Non-GMO Month and I’m super excited to be able to celebrate with CHEESE! I think it’s really important to know what’s in (or not in) your food, so I try to buy organic, all natural and non-GMO foods whenever I can.

GMOs are “genetically modified organisms,” organisms that have been genetically altered through gene splicing. DNA from different species are merged, creating combinations that do not naturally occur in nature. GMOs are engineered with the intention of creating higher yields. It has not yet been proven that the production of GMO’s are meeting these goals, however more and more evidence is leading to the conclusion that GMO’s are creating health problems in humans and livestock and contributing to environmental damage.

Rumiano Cheese Company sent me a bunch of their organic cheeses to try out! Rumiano Cheese Company is the oldest family-owned cheese company in California. In 2011, Rumiano launched their Rumiano Family Organic line, which is the first cheese in the US market to receive Non-GMO Project Verification. They have all kinds of varieties, including the ones I tried– Colby, Monterey Jack, Pepper Jack, Sharp Cheddar and Mozzarella. Their cows are all grass-fed, which is something else I’ve been trying to buy lately. Have you noticed that grass-fed butter and cheese is bright yellow? That’s from all the delicious green grass (=nutrients) that the cows are eating instead of dry old GMO corn, hay or who knows what else.

Rumiano Cheese

I shredded the mozzarella and used it on top of pizza. Some of the cheddar was also shredded and piled onto homemade chili. Rumiano’s cheeses are so soft and velvety. I wanted to melt some of it into cheesy bliss, but I couldn’t decide which flavor to use. So I combined three of them, added some of my garden jalapenos, and ended up with this amazing dip!

Ingredients
  • 2 tbsp olive oil
  • 2-3 jalapenos, minced
  • 3 tbsp flour
  • 1 cup milk
  • Salt & pepper, to taste
  • ½ cup sharp cheddar cheese
  • ½ cup monterey jack cheese
  • ½ cup colby cheese
Instructions
  1. Heat oil in a medium sized skillet over medium heat. Add the jalapenos and cook 5 minutes, until slightly softened.
  2. Add the flour and stir to combine.
  3. Slowly whisk in the milk, then continue whisking until thickened, about 3 minutes. Season with salt and pepper.
  4. Add the cheese, stir to melt, then quickly remove from heat.
  5. Serve immediately with chips or fresh baguette.

    It’s hard to pick a single favorite cheese… I love them all! I don’t have any specialty stores convenient so my organic cheese options are limited to regular grocery stores but I do my best! πŸ™‚

    I don’t eat a ton of cheese, but I’m kind of a cheese fanatic! I could probably eat all of those blocks by themselves! That cheese dips looks awesome and my stomach is growling now πŸ™‚

    At work, I have quite the reputation as a cheese lover. I like to think of myself as Bubba (from Forrest Gump) but with cheese instead of shrimp. I like all kinds, all ways, all the time. πŸ™‚
