Buffalo Chicken Pasta Salad

August 14, 2012 by jessfuel 17 Comments

I let a photo of this dish slip through Instagram this past weekend, and I got several pretty excited responses. Not surprising, since this is a genius idea!

It’s been a while since I have fed my buffalo chicken obsession with anything new. To be quite honest, my buffalo chicken obsession has actually waned quite a bit lately. The only thing I can possibly attribute this to is the fact that we hardly ever go out to eat anymore and restaurants are usually where I get my fill of the fiery stuff.

I’ve seen a few different buff chick pasta salad recipes floating around the interwebs, and decided to take the bests parts of each one and combine them all together.

Considering I haven’t stopped thinking about this stuff since I finished the last bite of it, I’d say the obsession is back. With a vengeance.

Buffalo Chicken Pasta Salad

  • 1 box pasta, cooked, drained and cooled
  • 2 large chicken breasts, cooked and cubed
  • 5 celery stalks, sliced
  • 2 carrots, sliced
  • 1/2 red onion, finely diced
  • 1 cup blue cheese dressing
  • 1/2 – 3/4 cup buffalo sauce (depending on how hot you want it)
  • Fresh ground pepper, to taste

In a large bowl, combine pasta, chicken and veggies.

Β

In a small bowl, mix together blue cheese dressing and hot sauce and add to pasta mixture. Toss everything to combine and season with pepper.

Serve chilled.

Amazing. Creamy, spicy, crunchy, perfect.

And in case that’s not enough buffalo chicken for you, check out more from the obsession:

  • Buffalo Chicken Dip
  • Buffalo Chicken Quinoa Mac and Cheese
  • Buffalo Chicken Casserole
  • Buffalo Chicken Risotto
  • Buffalo Chicken Burgers

Enjoy!

OMG, this looks amazing. I may need to go make that for lunch right now.
Have you tried the buffalo chicken sausages? So good on pizza.

This is literally the exact same thing that I do for my buffalo chicken salad, except instead of pasta I use lettuce and croutons. It’s absolutely delicious, you should try it! I’ll definitely be trying the pasta soon.

I’m so excited I found your blog! My (Navy NFO) hubby and I love buffalo chicken. I sent him links to your recipes & he’s making me lists of what to make when he gets home from deployment!

    Hi,
This recipe looks Ah-Mah-Zing! We aren’t too big of blue cheese fans in my house, could you substitute Ranch Dressing for the Blue cheese?

Hi Hannah– If you’re serving it as a meal, it should feed about 6. If you’re serving it as a side or bringing it to a potluck, it will serve about 10+! It’s a full box of pasta, so it makes a big batch!

How long does this last in the fridge? I need a chilled lunch for work (no access to a microwave or oven) and this looks really good. Could I cook up a batch and eat it for 3-4 days? I figure all the ingredients would be fine but does the sauce separate or anything?

Hi AJ– It would definitely be fine all week! We always have leftovers and I’d say it even gets better as it sits and marinates. πŸ™‚
