Though I do normally enjoy slaving over the stove, adding a little of this, a little of that and stirring, stirring, stirring… once in a while I like to make things that are easy to throw together and pretty much cook themselves, without a babysitter.
This chicken was delicious and easy. While it was baking and making magic in the oven, I managed to clean half my house. For the first time since months before the wedding, I can actually see my kitchen table! It’s so nice to actually be able to eat a meal without having to bulldoze a pile of junk onto one corner. Hooray!
Parmesan Chicken
(adapted from Om Nomalicious)
- 3 large boneless, skinless chicken breasts, cut in half
- 2 cups grated Parmesan cheese
- 1 tbsp paprika
- 2 tbsp dried parsley
- 2 tbsp dried oregano
- Salt and pepper, to taste
- 1/4 cup butter, melted and slightly cooled
- 1/4 cup plain yogurt, room temperature
Preheat oven to 350 degrees.
In a bowl, combine Parmesan, paprika, parsley, oregano, salt & pepper. In another bowl, stir together butter and yogurt.
Dredge the chicken in the butter mixture, then in the Parmesan mixture, and place in a nonstick-sprayed baking dish. Bake about 30 minutes, until cooked through.
The chicken was moist and tender– perfectly cooked! For some reason it smelled like pepperoni, though it didn’t taste like it– very odd. But it was cheesy and herby, and perfect paired with some roasted cauliflower and storebought gnocchi (tossed in defrosted homemade pesto).
I’ll definitely be making this one again, next time I need something easy and quick!
