Yes, you read that correctly. White chocolate. S’mores. Gooey. Cake bars. All in one. If you haven’t been to the dentist in awhile, you may want to avoid these because, maaaan, will they make your teeth hurt.
But it hurts so good.
A layer of cake (yellow cake, at that… the best cake), a layer of graham crackers, a layer of white chocolate, a layer of marshmallows, another layer of cake, topped with more sweetness and baked to toasted marshmallow perfection? Nothin’ wrong with that.
Except for the fact that I need to fit into my wedding dress in approximately 17 days. SEVENTEEN DAYS!? Oh, boy. Where does the time go? Seriously. Is it just me or does it seem like Nick was juuust writing this guess post, like, yesterday? But nope. That was almost a year and a half ago. Yikes.
Anyways, luckily I made these bars mostly for friends, mostly big, hungry guys.
White Chocolate S’mores Gooey Cake Bars
(adapted from Picky Palate)
- 1 box yellow cake mix
- 1 large egg
- 1 stick unsalted butter, softened
- 4 1/2 full graham crackers
- 1 1/2 cups white chocolate chips
- 2 cups mini marshmallows
- 1/2 cup sweetened condensed milk
Preheat oven to 350 degrees. Line an 8-inch square baking pan with tin foil and spray the foil generously with nonstick spray.
In a mixing bowl, combine cake mix, egg and butter, and use your hands to form into a dough. Press half of the dough into a layer on the bottom of the pan. Next, layer on the graham crackers, then white chips, then marshmallows.
Next, carefully press the remaining dough evenly over the top. Pour the condensed milk over top of everything.
Bake about 28-30 minutes, until the top is nicely browned like a s’more!
Remove from the oven and let cool 5 minutes. Run a knife around the edges to loosen the marshmallow from the pan, then cool completely. Remove the bars from the pan using the edges of the foil.
Cut the bars into desired size.
I originally started cutting my bars to normal brownie size, but upon tasting one, we decided it was best to cut them smaller… as to not kill anyone by sugar overdose. These things are SWEET! So very delicious, but so very sweet. You don’t need a big piece to satisfy your dessert craving.
That being said, they are good to make for a crowd. If you make them all for yourself, one of two things will happen. They will last you forever and will probably go stale before you can eat them all… which would be tragic. Or… you will have no self-control, stuff your face, and end up feeling deathly ill. I’m sure you can guess which one would happen to me. So take some advice from your preschool teacher and SHARE these babies! Your friends will thank you.

OH. MY. GOSH. Be still my heart! Seriously, these bars look like a sugar coma I want to fall into. I love the idea of the sweetened condensed milk poured right on top to get all caramely and prettyful. LOVE!
