I mentioned last week that Sundays have become my Crock Pot days. I seriously love my Crock Pot and I can’t believe I went so long without one. It’s such a cheap appliance, everyone should have one! It just does something magical to meat!
I’ve made lots of chicken in the Crock Pot, and wanted to take another stab at pork this time around. Nick puts balsamic vinegar on absolutely everything, so when I saw this recipe with this delicious sounding balsamic glaze, I had to try it!
Crock Pot Balsamic Glazed Pork Tenderloin
(adapted from Mel’s Kitchen Cafe)
for the pork:
- 2 – 2 1/2 pounds pork tenderloin (one big one or two smaller ones)
- 1 tsp ground sage
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 cloves garlic, minced
- 1/2 cup water
for the glaze:
- 1/2 cup brown sugar
- 1 tbsp cornstarch
- 1/4 cup balsamic vinegar
- 1/2 cup water
- 2 tbsp soy sauce
Combine the sage, salt, pepper and garlic, and rub the spices evenly over the tenderloin. Place the pork in the slow cooker and pour in the water.
Cover and cook on low for 6-8 hours. About 30 minutes before the pork is done, combine the ingredients for the glaze in a small saucepan and bring the mixture to a boil. Reduce and simmer, stirring occasionally, until it thickens.
Remove the pork from the slow cooker and let it cool a few minutes.
Shred the pork and serve it drizzled with lots of glaze! (Note: I doubled the glaze recipe because I knew we would want it all over our mashed potatoes and broccoli, too. It was a good call.)
The pork came out super tender. It literally just fell apart when I tried to take a knife to it. The flavors of the sage and garlic were delicious and the sweet glaze was out of this world. We poured it all over everything!
