These Strawberry Milkshake Cookies are easy to make thanks to a secret shortcut– strawberry cake mix. Plus they’re cute and festive for Valentine’s Day or any pink party!
Well, it’s almost Valentine’s Day and that means stores are filling up with pink and red, hearts and kisses. And while I’m not big on the decorations, I do appreciate some fun and festive food!
These Strawberry Milkshake Cookies. They are different. For one thing, they are bright pink. That’s not usually my jam, but I’ll take it in the name of holiday spirit. These cookies are also super dee duper sweet! But guess what they taste like?
A STRAWBERRY MILKSHAKE!! Which just so happens to be my favorite. I don’t eat fast food often, but when I do I love a strawberry milkshake. And these cookies just feel nostaligic.
They are especially awesome with an ice cold glass of milk. It balances out the sweetness just perfectly.
The cookies are also really easy thanks to a nice shortcut– using boxed cake mix! You mix a box of strawberry cake mix with just a few other ingredients, add in some white chocolate chips, and voila! A perfect Valentine’s Day treat.
Any brand of strawberry cake mix should work. I’ve tried both the Pillsbury Moist Supreme (a bit pinker) and the Duncan Hines Perfectly Moist (a bit lighter colored) and they both work beautifully. If you want to switch it up and go for a chocolate-covered strawberry vibe you could use regular chocolate chips instead of the white chocolate.
If you’re looking for something cute for Valentine’s Day, or just something different than your average chocolate chip, you’ve definitely got to try these Strawberry Milkshake Cookies.

- 1 box strawberry cake mix
- 1 tsp baking powder
- 2 eggs
- ⅓ cup avocado (or vegetable) oil
- ½ tsp vanilla extract
- 2 cups white chocolate chips
- Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
- Combine all ingredients except the chocolate chips in a bowl and mix with an electric mixer until combined. Fold in chocolate chips by hand.
- Drop round (about 1 tablespoon) balls onto baking sheet.
- Bake for 10 minutes exactly. (Any longer and they will start browning.)
- Cool a couple minutes on the pan and then transfer to a wire rack to finish cooling.

My husband loves the strawberry milkshakes from Whataburger! These would be great to include in a care packages. I’m not sure how we’ll they’d hold up, but I also don’t think he’d mind if they were just crumbs. Haha!

They’re actually pretty sturdy… and they stayed moist for almost a week (maybe longer if we hadn’t eaten them all by then!)… I think the cake mix helps them stay moist.

You should be able to use any brand of cake mix– Pillsbury, Duncan Heinz, etc. As long as it is the regular-sized box and not a Costco size or something like that!

They are definitely super sweet cookies… if you’ve ever baked the strawberry cake, it is very sweet… as is white chocolate! I’m not sure why the batter was so sticky! I didn’t have any trouble handling it!

Mine turned out too sticky also. I think my problem was I bought a cake mix with pudding in it. That’s the only reason I can come up with.

Hi Camille, olive oil should work (same amount) though it may change the flavor (use a very light olive oil). I’m not sure how melted butter would translate, but it’s worth a try! Let me know how they turn out if you try it!

I just made these and they were great! I had to bake them a bit longer, though. Perhaps my oven is not as hot as yours. We can’t get strawberry cake mix here (Quebec, Canada) so I had to get my husband to bring some home from Florida on his last trip!

My daughter originally found this recipe because we were doing a cookie’s and milk 2nd birthday party for my granddaughter. We made 24 different cookies and these were the first ones all gone! Did parts of the top of these brown for anybody? They don’t look horrible but they aren’t totally pink and white like the pic. Just wondering if that’s normal as I don’t see the same in the pic :-/ I know I didn’t over cook them as after 7 or 8 min they started to brown.

It probably just depends on the brand of cake batter… different brands may use different amounts or types of food coloring.
