We eat a lot of chicken, but lately it’s been getting a little boring. We’ve been doing a lot of grilled chicken with BBQ sauce and many, many batches of our favorite Maple Dijon Chicken. I had chicken to cook this weekend and wanted something different.
My first thought was buffalo chicken, which we haven’t had in what seems like forever! Sadly, my Frank’s bottle was nearly empty. So I looked around the fridge for something else spicy and spotted a big jar of sambal oeleck that I impulse purchased based on the fact that it’s made by the same people as our beloved sriracha sauce. Sambal oeleck is a super spicy chili sauce that my friend refers to as “crack sauce” because it’s so darn delicious.
This recipe is a cinch to pull together and brings together lots of yummy sweet, spicy, and salty Asian flavors. The chicken is great served with rice and a big batch of veggies such as grilled peppers and mushrooms, or steamed broccoli.
- ½ cup packed brown sugar
- ½ cup unseasoned rice vinegar
- ⅓ cup hot chili paste (such as sambal oelek)
- ¼ cup fish sauce
- ¼ cup sriracha
- 2 tsp grated fresh ginger
- 1½ pounds skinless, boneless chicken breasts, cut into 1½-inch cubes
- Whisk brown sugar, vinegar, sambal oeleck, fish sauce, sriracha, and ginger in a large bowl.
- Pour into a large ziplock bag or tupperware, add chicken, and toss to coat.
- Marinate 1-3 hours in the fridge.
- Thread 5 or 6 chicken pieces onto wooden skewers.
- Transfer marinade to a small saucepan. Bring to a boil, reduce heat, and simmer until reduced by half (about 1 cup), 7–10 minutes.
- Preheat grill to medium-high heat.
- Grill chicken, turning and basting often with reduced marinade, until cooked through, 8–10 minutes.
The chicken came out awesome– super spicy and very flavorful. We loved it! Considering how easy it was to make, I’m sure it will be a staple!

I’m so excited to try this “crack sauce” recipe :)! You know that I’ve been impatiently waiting for my “crack” to come in the mail and it finally arrived yesterday. You actually just dropped me off from the gym and we were talking about your meatless chili recipe. When I mentioned making it for dinner to Mark (my husband) said that he absolutely loved your buffalo chicken chili and would I please make that one. So, I went to look up buffalo chili and this treasure appeared! I’ll be making this sometime this week and I cannot wait!!

Yay!! This one is EASY too!! I like it because I always have the ingredients on hand and I can just pull chicken out of the freezer!
