Sambal Chicken Skewers

Ingredients
  • ½ cup packed brown sugar
  • ½ cup unseasoned rice vinegar
  • ⅓ cup hot chili paste (such as sambal oelek)
  • ¼ cup fish sauce
  • ¼ cup sriracha
  • 2 tsp grated fresh ginger
  • 1½ pounds skinless, boneless chicken breasts, cut into 1½-inch cubes
Instructions
  1. Whisk brown sugar, vinegar, sambal oeleck, fish sauce, sriracha, and ginger in a large bowl.
  2. Pour into a large ziplock bag or tupperware, add chicken, and toss to coat.
  3. Marinate 1-3 hours in the fridge.
  4. Thread 5 or 6 chicken pieces onto wooden skewers.
  5. Transfer marinade to a small saucepan. Bring to a boil, reduce heat, and simmer until reduced by half (about 1 cup), 7–10 minutes.
  6. Preheat grill to medium-high heat.
  7. Grill chicken, turning and basting often with reduced marinade, until cooked through, 8–10 minutes.
