July 22, 2011 By jessfuel Leave a Comment

A week or so ago, Nick decided that he was getting sick of sandwiches for lunch, and wanted to buy some frozen rice bowls to take to work. Frozen meals? Uhm, I don’t think so. Sometimes we get to the register at the grocery store, and as I’m unloading the cart, I find packages of…

Green Curry Chicken and Veggies…

July 21, 2011 By jessfuel 1 Comment

… or, Thai Coconut Chicken Stew. So, this recipe was kind of a dud. It wasn’t bad at all… in fact, it was quite tasty. But it did not taste at all like what it was supposed to taste like. I used this recipe for Green Curry Veggies, and added chicken for the meatatarian. But……

These Lemon Poppy Seed Scones are the perfect balance of sweet and tangy. They pair wonderfully with a cup of tea or coffee! Waldorf Quinoa Salad

July 11, 2011 By jessfuel Leave a Comment

When we were in Missouri over the 4th of July weekend, Kelly made us lots and lots of good food. Since she reads the blog and knows about my recent quinoa obsession, she was awesome enough to make one particular dish she knew I’d like: Waldorf Quinoa Salad. Of course I loved it! Besides my…

It’s lightly spiced with guacamole flavors and the perfect healthy snack paired with veggies or tortilla chips! Admittedly, this dip is not very photogenic, but I promise you it is oh so delicious. I mean, we love hummus, we…
