So I felt bad for Nick and his classmates working SO hard lately, and decided to make them cookies. Then I visited their squadron building yesterday. Work? Uhmmm, yeah right. There is more booze in that place than I had in my college dorm room! Work hard, play hard… I guess? Hmmm, I suppose they still deserve the cookies.
I wanted to make oatmeal cookies, but I couldn’t decide between raisins or chocolate chips. So different, but both so good. Then I thought, hey, the guy who invented Raisinettes didn’t have to decide… why should I? So I threw in both. And some nuts, just for good measure.
Oatmeal Everything Cookies
makes about 24 cookies
- 1/2 cup + 2 tbsp all purpose flour
- 1/2 cup whole wheat flour
- 1/2 tsp cinnamon
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups oats
- 3/4 cup chocolate chips
- 1/2 cup raisins
- 1/2 cup chopped walnuts
- 10 tbsp butter
- 1 cup packed brown sugar
- 1 egg
- 1/2 tsp vanilla extract
Preheat the oven to 350 degrees. In a mixing bowl, combine flours, cinnamon, baking powder, soda and salt. In another bowl, combine oats, chocolate chips, raisins and walnuts.
Beat the butter with a KitchenAid or hand mixer on medium until fluffy. Add the sugar and continue beating, then add the egg and vanilla and mix until combined. Add the oatmeal mix and beat on low until everything is just combined.
Drop tablespoons of dough onto a parchment lined cookie sheet.
Bake about 12 minutes until just browned around the edges.
I had good reviews all around, and, I’m not going to lie, I saved about a half dozen for myself. Whatever, they’re made of oatmeal, that’s practically like eating breakfast!
The cookies were perfectly chewy and delicious. I hate cookies that don’t have enough chocolate chips or raisins, and these definitely did not disappoint. I suppose maybe, just maybe, I’ll have to come up with another treat for the boys next week. 🙂
