Our local strawberry stands. I can’t stop. Or, I guess the problem is that I do stop. Every time I drive by. Which is almost every day since we’ve got 3 of them within a mile of our house. I suppose there are worse problems than having an over abundance of perfect, ripe, deliciously fragrant fresh strawberries. Seriously, as soon as I plop the baskets of beautiful jewels in my passenger seat and close the doors, the scent is just intoxicating.

The thing about local, fresh fruit is that it often comes with free bugs and spiders, and a little extra dirt and dust. So I try not to gobble the berries down before I get home and wash them, but… IT’S SO HARD not to.

Anywho, since I’ve had so many strawberries lately I’ve been trying to think of fun new ways to use them. Since Cinco de Mayo is coming up, I thought about a strawberry salsa. But I then I found the most beautiful, perfectly ripe avocados and since that doesn’t happen all that often, I had to take advantage of them. So instead of salsa, I went  the guacamole route.

Who doesn’t love guacamole? Crazy people, maybe. I don’t really want to know those people.

This version of guac is sweet and spicy with fresh juicy berries and a little jalapeno. It’s pretty simple– just a bit of cilantro, lime juice and salt for seasoning– but that’s how perfect produce should be! We’ve got a long summer of strawberries ahead of us, so I’ll definitely be making this again.

Serves: 4
Ingredients
  • 2 large, ripe avocados
  • 1 medium jalapeno, seeds removed and minced
  • 10 large strawberries, finely diced
  • Juice of 1 small lime
  • 1 tsp finely chopped cilantro
  • Salt, to taste
  • Tortilla chips, for serving
Instructions
  1. Remove skins and pits from avocados and mash them with a fork in a small bowl.
  2. Add jalapeno, strawberries, lime juice and cilantro and stir to combine.
  3. Season to taste with salt.
  4. Serve immediately with tortilla chips!

    Oh my gosh, I need to make this asap with all the Louisiana strawberries out too. I just realized the last time we had it was when you visited us in Mobile (which is WAY too long ago- both for guac and for visits)! <3

    I am obsessed with guacamole. I could probably eat it every day. But I’ve never had one wth strawberries before. This sounds so good! I can’t wait to try it.

    What a great idea! I have never even though to put Strawberries in guac. I bet its so yum! Gotta say, you are a lucky girl. We dont have our fresh strawberries up in canada yet, but they are coming and I cant wait!!
