Ginger Wasabi Snack Mix

Ginger Wasabi Snack Mix

We’re well into football season and it’s one of my favorite times of year because… well… Sunday Funday! Football is pretty much the best ever excuse to eat apps and snacks as a meal, right?

For the past 3 years, we’ve spent our Sundays during football season with one of our favorite Navy couples who we met when we were all stationed in Mississippi (where our Sunday Fundays originated with my Buffalo Chicken Chili!). We’ve had some pretty epic snacking days. And lots of fun rival games!

Sadly, those friends moved to Japan over the summer. So I’m a little lost without my gameday friends. But you can bet I’m still snacking the heck out of Sundays. And hopefully they are too, with some good satellite TV, on the other side of the world.

Ginger Wasabi Snack Mix

The usual suspects– chips and dip– are a little too boring. I like to snazz my snacks up a little more than that. Blue Diamond Almonds has some great unique Game Changing Flavors out and the Wasabi & Soy Sauce flavor inspired this delicious snack mix. Which should come with a disclaimer because it’s super addictive and you may just find yourself eating the whole batch in one sitting!

My team finally lost this past weekend, which was a little sad, but the good news is they’re still pretty awesome and still doing better than most teams! And really, everyone’s a winner with delicious snacks, drinks and great company. So hurry up and whip up this snack mix ASAP!

Ginger Wasabi Snack Mix

Serves: 8-10
Ingredients
  • 3 cups crispy rice squares cereal
  • 1½ cups chow mein noodles
  • ¼ cup butter
  • 2 tbsp rice vinegar
  • 1 tbsp soy sauce
  • ¾ tsp ground ginger
  • ¼ tsp cayenne pepper
  • 1 cup wasabi peas
  • 1 cup Blue Diamond Wasabi & Soy Sauce Almonds
Instructions
  1. Preheat oven to 300 degrees.
  2. In a large bowl, toss together rice cereal and chow mein noodles.
  3. Melt butter in a small saucepan over medium heat. Add rice vinegar, soy sauce, ginger and cayenne, whisking together. Bring to a boil, then remove from heat.
  4. Pour melted butter mixture over rice cereal and chow mein noodles, and stir to evenly coat.
  5. Spread mixture out evenly on a rimmed baking sheet. Bake 25-30 minutes, stirring every 8-10 minutes, until mixture is lightly browned and no longer wet.
  6. Let cool on pan, then transfer to a bowl and toss with wasabi peas and almonds.
  7. Serve immediately or store in an airtight container.

    Football is definitely my excuse to snack on food! I’ve been thinking of ways to use my Wasabi & Soy Sauce almonds, but I think I know what to use them for now. This looks so good, Jess!

    I will be the first one to admit that I do not like football one bit, but I will watch it just for the snacks! Especially with this snack mix…it looks SO good! I love the wasabi almonds in here!

      Haha!! It’s totally a different kind of spicy!! So I understand. πŸ˜‰ Jalapeno is mouth-spicy. Wasabi just hurts your brain. But it hurts so good!
