Chocolate chip cookies are great. Peanut butter cookies are amazing. But my all time favorite Christmas cookie? Ginger Molasses Cookies!
Maybe it’s because people only make them around Christmas and that makes them more special. One bite of these chewy, gingery, clovey little bites of heaven immediately puts me in the holiday spirit.
I make these cookies almost every year, so I’m surprised they haven’t shown up on the blog yet (I think I may have missed them last year– tragic). When I decided to take on the challenge of baking 12 batches of cookies this year, these were on the top of the list. They may not be super fun and unique, but they are a great classic cookie and one I wouldn’t leave off this list!
Day 4: Ginger Molasses Cookies
(adapted from Taste of Home, Best Loved Cookies and Bars 2009)
- 3/4 cup butter, softened
- 1 cup sugar
- 1 egg
- 1/4 cup molasses
- 2 1/4 cups all-purpose flour
- 2 tsp ground ginger
- 1 tsp baking soda
- 3/4 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1/4 tsp salt
- Additional sugar, for rolling
Preheat oven to 350 degrees.
Using an electric mixer, cream butter and sugar together until light and fluffy. Beat in egg and molasses. In a mixing bowl, combine the flour, ginger, baking soda, cinnamon, cloves and salt, and gradually add to the creamed mixture until well mixed.
Roll into 1 1/2 inch balls, then roll in sugar. Place 2 inches apart on ungreased baking sheets.
Bake for 10-12 minutes or until puffy and lightly browned. Remove to wire racks to cool.
They were just as good as I remembered them… Christmas in a cookie and still my number one favorite!

My wife and I are not bakers… at all. But this year we decided that we needed to bake some Christmas cookies for the first time. And when we both sat around not doing anything after that proclamation, I figured I better step up. I mixed up teaspoons with tablespoons once or twice and threw away a few batches of nasty, salty dough, but finally made a few batches of good cookies for the holidays. Then I found these ginger molasses cookies and I swear, I nailed them! They were freakin’ awesome! They were so easy and they come out perfect, which upped my baker reputation points many times over. These cookies smell great and taste delicious. Thanks for the recipe!
