Happy Election Day! Or, as I like to call it, Happy Last Day of Annoying Facebook Posts Day! Hooray! Since I’m sure everyone will be out at the voting booth or glued to their TV’s tonight, I thought I’d share with you a super easy dinner idea that takes seconds to prepare and doesn’t require any chopping or crazy ingredients… yet the end result is amazing.
This year was my first year voting (we voted early). I know, I know. Terrible. The first year I was old enough to vote, in 2004, I was studying abroad and living in Paris. While I’m sure I could have easily voted by absentee ballot, that really was the last thing I wanted to think about while frolicking around eating baguettes and drinking wine. I’m not sure why I didn’t vote in 2008, but it probably had something to do with the fact that I am lazy and I lived in Massachusetts, where there was really no question about who was going to win the state anyways.
There’s not really any question about who is going to win Mississippi this year either, but I guess now that I am pretty much married to Uncle Sam, I should try to be a good American and all that jazz.
Anyhow, this chicken is amazing. Probably one of the best chicken dishes I’ve ever made, and the best part is it is so simple. The blog where I found this recipe called it “Man-Pleasing Chicken,” and I totally agree. However, it’s pretty woman-pleasing as well.
Maple Dijon Chicken
(adapted from Witty in the City)
- 1/2 cup Dijon mustard
- 1/4 cup maple syrup (do not, I repeat, do NOT use fake pancake syrup)
- 1 tbsp rice vinegar
- 1.5 lbs boneless, skinless chicken thighs
- Salt & pepper
- Fresh or dried rosemary
Preheat oven to 450 degrees. In a bowl, combine mustard, maple syrup and vinegar.
Place chicken in a foil-lined baking dish and season with salt & pepper. (Note: the foil isn’t necessary, but makes clean-up MUCH easier.) Pour the sauce over top and make sure chicken is well coated.
Bake chicken 35-40 minutes, basting with sauce halfway through. When chicken is done, sprinkle with rosemary.
Serve topped with extra sauce.
well, if it makes you feel better, I voted in the past 2 elections, but was too lazy for the absentee ballot for this one, so looks like you and I are a pretty good team. You can vote next time for us too since I’m pretty sure I’m never leaving this country :o)
