These Cinnamon Caramel Apple Cookies start with a moist and chewy base, and are studded with dried apples, cinnamon chips and caramel bits. They smell like fall and taste like heaven!
Ok guys, I know my last post hit you with a super duper healthy recipe. But life is all about balance, right? So today, let’s dive into a face-full of butter, sugar and seasonal magic, shall we? I’m talking about these amazingly moist, gooey Cinnamon Caramel Apple Cookies.
It’s been a few weeks since I broke out my seasonal candles and Scentsy. Pumpkin spice, apple cider, cinnamon stick. My house has been smelling pretty darn delicious. But do you know what beats all those candles? Baking a batch of these cookies, of course! If you want your house to smell magical, you’re just going to have to make some.
The idea for these cookies came to me after I bought a bag of cinnamon flavored dried apples (they’re the Target Simply Balanced brand) and they were SO SWEET that I couldn’t really justify eating them as a snack. They were more like dessert. And I thought, Hey! These would be really good in a cookie instead of raisins!
So I chopped them up and stuffed them into cookies with cinnamon, cinnamon chips and caramel bits. All the autumn goodness. And they were amazing. I brought them to a party (thank God, or I would have eaten the entire batch) and they went like wildfire.
So if you’re looking for a fall treat, here you go. If you can’t find cinnamon flavored apples, you could definitely use plain dried apples and these would be just as good!
- ¾ cup butter, room temperature
- ¾ cup brown sugar
- ½ cup granulated sugar
- 1 egg
- 1 tbsp vanilla
- 2 cups flour
- 1 tbsp cornstarch
- 1 tsp baking soda
- 1 tsp ground cinnamon
- ¾ tsp salt
- ¾ cup chopped dried apples, cinnamon flavor or plain
- ½ cup cinnamon chips
- ¼ cup Kraft caramel bits
- Preheat oven to 350 degrees.
- Using a stand or hand mixer on medium speed, beat together butter and sugars until light and fluffy, about 3 minutes. Add the egg and vanilla and continue beating until combined.
- Turn the mixer to low and slowly add flour, cornstarch, baking soda, cinnamon and salt until combined. (You can mix the dry ingredients in a bowl first, but I just add them directly to the mixing bowl to save dishes.)
- Add the dried apples, cinnamon chips and caramel bits, and mix until just combined.
- Scoop heaping tablespoons onto a nonstick or parchment-lined baking sheet. (They don't spread drastically, so they can be fairly close together.)
- Bake 8-9 minutes until bottom edges are JUST barely golden. They may look slightly underdone, but don't overbake!
- Remove from oven and let cool on the pan a few minutes before transferring to a wire rack.

I am loving these cookies! I can only imagine how awesome they make the house smell!

It is still about 95 degrees here but I’m am breaking out all the fall stuff too! My husband wouldn’t let me put up the Halloween decorations yet though, haha! These cookies are some of the best fall cookies I’ve seen 🙂

We don’t have cinnamon chips here, or baking caramel pieces. Are there any other adjustments to make when using normal ground cinnamon, and any recommendations for the caramel? Thanks!
