Lately I seem to be running late for everything, all the time. I’m always a pretty early riser but I seem to just dawdle around and find things to do (important things, like checking SnapChat) until I only have 30 minutes to shower, eat, get ready and get out the door. Every time I do it, I wonder why I did this to myself. But then I do it again!

One thing that’s been suffering is my morning coffee! Nick bought some crazy fancy coffee maker that’s great except for the fact that it seriously takes like 20 minutes to brew coffee. And when I’m trying to make it in a rush, that just doesn’t work. Even our little French press takes a while since I need to boil water for it and then wait for it to steep.

And forget about the drive-through. The one by my house is always packed and it’s easy to get stuck in line for 15 minutes in the morning. Ain’t nobody got time for that!

Which is sad, because I’ve totally been into fancier drinks like lattes lately. Usually I’m just a plain old black coffee drinker, but since I’ve been trying to add protein into my diet wherever I can, I’ve been drinking my coffee with lots of milk. And foamy, steamed milk is so good.

I’ve been debating getting an espresso maker, or at least a milk frother for a while now, but I recently learned you can make frothed milk in the microwave. How fun is that? All you need is a jar with a lid. A mason jar or even an old (washed) glass peanut butter or pickle jar will do. It involves a little vigorous shaking. Just think of it as your morning workout.

After determining that I could easily make a latte at home with the microwave-frothed milk method, I took it one step further and decided to take the entire thing to the microwave. Folgers Instant Coffee is a super quick way to make a cup of coffee.

It only takes 2 minutes in the microwave to boil a mug of water, and only about 2 seconds to stir in the Folgers instant coffee crystals. And your coffee is done and ready to be served up with some delicious foamy milk!

You can make your latte even more special by making it a mocha– add some hot cocoa mix along with the coffee crystals! I love the combination of chocolate and coffee, so the mocha flavor is the perfect pick me up for me in the morning.

Microwave Mocha Latte

Ingredients
  • 6 oz water
  • 1 heaping tsp Folgers Instant Coffee
  • 1 heaping tsp hot cocoa mix
  • 3 oz milk
Instructions
  1. Microwave 6 oz water in a mug on high for 2 minutes, or until boiling.
  2. Stir in instant coffee and hot cocoa mix.
  3. Pour milk into a jar, tightly cap with lid. Shake vigorously for 30 seconds until milk has doubled in size.
  4. Remove lid and microwave milk in the jar for 30 seconds.
  5. Pour the milk into the coffee and spoon foam on top.
  6. Enjoy!

    Whenever I see mocha latte, I think of that Lady Marmalade song..haha! This looks SO good, Jess! I’m always a fan of quick and easy drinks. Love the flavor of this!

    I tried this with an adjustment I used a Kcup coffee pod for my coffee, soy milk and skinny mocha syrup with Splenda so yummy ?
