Everywhere I go, I’m always on the lookout for interesting recipes. Nick and I spent last weekend on vacation at the beach, in a little cottage with a bunch of his family. While there, I happened to pick up his cousin’s Better Homes and Gardens magazine. Though I’ve never subscribed myself, I’ve visited my fair share of hair salons and doctor’s offices, and I knew that buried beneath the gardening tips and DIY projects, there had to be at least a few recipes.
I flipped open the magazine, and the first page it opened to looked amazing. Cilantro Garlic Ribs. I love me some cilantro, and you know the meatatarian is always asking for ribs. I made a note to look up the recipe when I got home, and I definitely did not forget!
Cilantro Garlic Ribs
(from Better Homes and Gardens)
- 2 tbsp minced garlic
- 1 large bunch cilantro
- 1 tbsp sugar
- 1 cup reduced-sodium soy sauce
- 1/2 cup Asian sweet chili sauce
- 1/4 cup vegetable oil
- 3 lb. baby back pork ribs
In a food processor, combine garlic, cilantro and sugar.
Process until ingredients form a paste. Add soy sauce, chili sauce, and oil. Pulse until well combined.
Pour mixture over ribs in a large container, and turn to coat well. Cover and refrigerate over night.
The next day…
Preheat oven to 250 degrees. Preheat grill. Remove ribs from the sauce, shaking off any excess. Reserve remaining sauce. Grill ribs 4 minutes on one side. Flip and grill another 4 minutes.
Transfer to a baking dish, and cover with remaining sauce. Cover with foil and bake 3 hours (my pack of ribs was only 2.7 lbs, so I baked 2.5 hours. Figure about an hour a pound).
Yum yum yum! Cut them up and serve!
These came out awesome! I hate tough ribs that require use of your canines to rip the meat from the bone. No problem here. They were super tender and falling off the bone. The flavor was great too. I was worried they might be too salty because of all the soy sauce, but they were just about perfect (I definitely wouldn’t sub regular for the reduced sodium, though). And even though they take a while to marinate and cook, the actual prep work is quite easy! YUM!
