Dried apricots are topped with creamy goat cheese, crunchy pistachios and a drizzle of honey. These Pistachio & Goat Cheese Apricot Bites are a perfect easy snack or appetizer for your next party or game day gathering!
This last year was a bit of a blur. I didn’t post nearly as many recipes as I wanted to. I made lots of things that just never got photographed, I made a lot of easy favorites that are already on the blog, I relied on a lot of takeout and Blue Apron (which I’m in love with).
I’m hoping I’m better this year, though I’m not making any promises. Life kinda gets in the way sometimes, but I love each and every one of you that still drops by here from time to time to check for new recipes!!
That being said, I did have a few hits this year. My most popular recipe of 2016, by far, was a cute, easy little appetizer– these Dilly Cucumber Bites! They took off like crazy.
I guess because they’re easy, healthy(ish) and delicious. Which is a pretty winning combo in the Pinterest world. You guys definitely like easy recipes. And they’re so fun and kind of impressive for entertaining!
So, since those like bites were so popular, it only made sense to try to start 2017 out strong with another cute lil bite-sized snack. Especially since football party snack season is upon us. I mean, Sundays are meant for mimosas and apps, right?
These lil snacks aren’t quite as healthy. Creamy goat cheese and a drizzle of honey kick them up a bit. But you’ve also got fruit and nuts in there, and compared to say– buffalo chicken dip?– I say that’s a win.
As always, sweet and salty is my favorite combo and these bites also have some great contrasting textures. They’re a perfect little mouthful!
- ~3 dozen dried apricots
- 4 oz goat cheese
- ⅓ cup finely chopped pistachios
- Honey, for drizzling
- Place apricots on a plate or serving tray.
- With a spoon, spread a small dollop of cheese over each apricot.
- Sprinkle about ½ tsp crushed pistachios on each.
- Drizzle with honey.
- Enjoy!

Apricots, goat cheese and a honey drizzle are a delicious and nutritious snack. This recipe also calls for pistachios. So yummy!
Add one or two dried cranberries on top with the nuts for color, flavor and interest. This is a five star recipe. (The star rating would not click to five)
