Fall is here and I love to use cinnamon chips in recipes! These Cinnamon Chip Pumpkin Blondies are perfectly sweet and spiced, an awesome seasonal treat.

Ingredients
  • ½ cup canned pumpkin
  • 2 eggs
  • 1 tbsp avocado oil (or vegetable/canola oil)
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ½ tsp ground cinnamon
  • ½ tsp ground allspice
  • ½ tsp ground ginger
  • pinch ground nutmeg
  • ¼ tsp salt
  • ⅔ cup brown sugar, packed
  • ½ cup cinnamon chips
Instructions
  1. Preheat oven to 350˚F.
  2. Line the bottom of a 9x13 inch pan with parchment paper and set aside.
  3. In a large bowl, combine pumpkin, eggs and oil until smooth.
  4. In another bowl, mix together the flour, baking powder, spices, salt and brown sugar.
  5. Add the dry ingredients to the wet ingredients and mix well.
  6. Stir in the cinnamon chips.
  7. Pour into prepared pan and spread evenly. Bake for 15 to 20 minutes until set.
  8. Cool completely before cutting.
