Buffalo Chicken Salad Lettuce Wraps
These Buffalo Chicken Salad Lettuce Wraps are an easy make-ahead meal that are easy to meal prep. They're light and healthy but full of the comfort-food flavors you love!

  • 2 medium chicken breasts, cooked, cooled and diced
  • 2 medium carrots, peeled and diced
  • 3 stalks celery, diced
  • ¼ cup mayonnaise
  • 2-3 tbsp Franks RedHot sauce (or any buffalo sauce)
  • 1 head butter lettuce or romaine
  • Blue cheese crumbles (optional), for topping
  1. In a large bowl, combine chicken, carrots and celery.
  2. Add mayonnaise and buffalo sauce. Toss everything well to combine.
  3. Scoop chicken salad into lettuce leaves.
  4. Top with blue cheese crumbles, if desired, and serve.
  5. Store extra chicken salad in an airtight container in the fridge.
