Carrot Cake Baked Oatmeal

  • 3 cups old fashioned oatmeal
  • 2 tsp ground cinnamon
  • ¼ tsp salt
  • 1 tsp baking powder
  • 2 eggs
  • ¼ cup brown sugar
  • 1 tsp vanilla extract
  • 1½ cups milk
  • ¼ cup butter, melted and cooled slightly
  • 1½ cups grated carrots
  • ¾ cups roughly chopped walnuts or pecans
  • For the Glaze:
  • ½ cup powdered sugar
  • 2 tbsp cream cheese, at room temperature
  • 1 tsp lemon juice
  • ¼ tsp vanilla extract
  1. Preheat over to 350 degrees. Spray a 9-inch square baking dish with nonstick spray and set aside.
  2. In a large bowl, mix together oatmeal, cinnamon, salt and baking powder.
  3. In another bowl, whisk together eggs, brown sugar and vanilla. Then whisk in milk and melted butter.
  4. Pour the wet ingredients into the dry and stir until combine. Fold in the carrots and nuts.
  5. Pour into prepared baking dish and bake 30-35 minutes until center is set and edges are just beginning to brown.
  6. Meanwhile, to make the glaze, whisk all ingredients together in a bowl.
  7. Drizzle glaze over baked oatmeal and serve warm.
