Serves: 4
Ingredients
  • 1 cup whole wheat flour
  • ½ cup all purpose flour
  • 3½ tsp baking powder
  • ½ tsp salt
  • 2 tbsp sugar
  • 1½ cups milk
  • 1 egg
  • 3 tbsp melted butter
  • 1 tsp vanilla
  • ~1 cup fresh cranberries, halved if they are large
  • ~1 cup chocolate chips
Instructions
  1. In a large bowl, mix flours, baking powder, salt and sugar. In a smaller bowl, beat together milk, egg, butter and vanilla.
  2. Pour the wet ingredients into the dry and whisk until there are no more lumps. If the batter seems to thick to mix, add another splash of milk.
  3. Let the batter rest a few minutes. In the meantime, heat a large, dry nonstick skillet over medium-high heat.
  4. Ladle pancakes batter into the skillet, then sprinkle on chocolate chips and cranberries.
  5. Once the pancake is nice and bubbly, peek underneath and see if it’s ready to flip! It should be nice and golden brown.
  6. Flip and cook on the other side a few minutes until golden.
  7. Repeat with remaining batter.
  8. Serve with butter and real maple syrup!
