White Chocolate Ginger Molasses Cookies

Serves: 2½ dozen cookies
- ¾ cup butter, softened
- 1 cup sugar, plus more for rolling
- 1 egg
- ¼ cup molasses
- 2¼ cups all-purpose flour
- 1 tsp baking soda
- 2 tsp ground ginger
- ¾ tsp ground cinnamon
- ½ tsp ground cloves
- ¼ tsp salt
- 1 cup white chocolate chips
- Preheat oven to 350 degrees.
- Using an electric or stand mixer, cream butter and sugar together until light and fluffy. Beat in egg and molasses.
- In a large bowl, combine the flour, baking soda, spices and salt. Gradually add to the creamed mixture until well mixed.
- Add the white chocolate chips and mix on low for just a few seconds, until the chips are distributed.
- Roll into 1½ inch balls, then roll in sugar. Place 2 inches apart on ungreased baking sheets.
- Bake for 10-12 minutes or until puffy and lightly browned. Remove to wire racks to cool.
