Slice baguette pieces in half and place cut-side up on a baking sheet. Spread honey mustard evenly on 2 of the baguette halves. Layer turkey and Brie on top of the honey mustard.
Bake baguettes (both bottoms and tops) about 10 minutes, until cheese is melted and bread is warm. Remove from oven.
Top with peaches and arugula. Sandwich both halves together and serve immediately.
