Sesame Shrimp Lettuce Wraps

Ingredients
  • 1 tsp olive oil
  • 1 clove garlic, minced
  • ½ inch fresh ginger, minced
  • 20 oz peeled and deveined large shrimp, tails removed
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • Juice of 1 lime
  • 1 tbsp sesame oil (untoasted)
  • 1 tbsp rice vinegar
  • Salt, to taste
  • ¾ English cucumber, diced
  • 1½ avocados, diced
  • 3 green onions, sliced
  • 2 small heads butter lettuce
  • 1 tbsp toasted sesame seeds
Instructions
  1. Heat the olive oil in a skillet over medium-high heat. Add the garlic and ginger and cook until fragrant, about 2 minutes. Add the shrimp and cook until shrimp is cooked through, about 4 minutes.
  2. In a small bowl, whisk together honey, soy sauce, lime juice, sesame oil and rice vinegar. Season with salt.
  3. In a large bowl, combine shrimp, cucumber, avocado and green onion. Pour the dressing over top an toss to coat.
  4. To serve, scoop shrimp mixture into lettuce leaves and top with sesame seeds. (And sriracha if you like a little kick!)
