Baked Salsa Chicken
 
 
Serves: 2
Ingredients
  • 3 small or 2 medium/large boneless, skinless chicken breasts (about 1 lb)
  • 2 tsp taco seasoning (or make your own: cumin, chili powder, oregano, cayenne, garlic powder, salt)
  • ½ cup salsa
  • ½ cup shredded sharp cheddar cheese
Instructions
  1. Preheat oven to 375 degrees.
  2. Place chicken breasts in a lightly greased 8-inch baking dish. Sprinkle taco seasoning evenly over both sides of chicken breasts. Spread the salsa on top.
  3. Bake 25 to 35 minutes, or until chicken is cooked through and juices run clear.
  4. Remove chicken from over and sprinkle evenly with cheese.
  5. Return to oven and continue baking for an additional 3 to 5 minutes, or until cheese is melted and bubbly.
