You would never know these Flourless Chocolate Chip Blondies are made from chickpeas! They are moist, delicious, packed with chocolate chips and gluten-free.

Ingredients
1 cup natural smooth peanut butter
⅓ cup honey
2 eggs
¼ tsp salt
½ tsp baking soda
1 (15 oz) can chickpeas, drained and rinsed
1 tsp vanilla extract
1 cup chocolate chips
Instructions
Preheat oven to 350 degrees F.
Coat an 8×8 baking dish or pie dish with non-stick spray.
Add all ingredients except the chocolate chips to a food processor and process until smooth. Transfer to a mixing bowl.
Using a rubber spatula, fold in the chocolate chips.
Pour mixture evenly into baking dish or pie pan, and smooth the top.
Bake for 30-35 minutes, until the center is set and a toothpick comes out clean.
Let cool at least 10 minutes, then cut and serve!
