Chocolate Chip Chickpea Blondies
 
 
You would never know these Flourless Chocolate Chip Blondies are made from chickpeas! They are moist, delicious, packed with chocolate chips and gluten-free.

Ingredients
  • 1 cup natural smooth peanut butter
  • ⅓ cup honey
  • 2 eggs
  • ¼ tsp salt
  • ½ tsp baking soda
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1 tsp vanilla extract
  • 1 cup chocolate chips
Instructions
  1. Preheat oven to 350 degrees F.
  2. Coat an 8×8 baking dish or pie dish with non-stick spray.
  3. Add all ingredients except the chocolate chips to a food processor and process until smooth. Transfer to a mixing bowl.
  4. Using a rubber spatula, fold in the chocolate chips.
  5. Pour mixture evenly into baking dish or pie pan, and smooth the top.
  6. Bake for 30-35 minutes, until the center is set and a toothpick comes out clean.
  7. Let cool at least 10 minutes, then cut and serve!
