I’m channeling my inner college student today. Thirsty Thursday it is.

Fresh Watermelon Margaritas

Remember when you were 20 years old, could throw back half a case of beers on a Thursday night, get up and go to class at 8 am, and somehow retain enough information to pass a final exam?

Those were the days.

Too bad half a case of beers would put today’s me in a coma and a subsequent 5-day hangover. Woof.

But I can still have Thirsty Thursday. Only… I’ll take a couple delicious Fresh Watermelon Margaritas instead!

I made these last Thursday and posted a little preview on Instagram. Everyone had watermelon marg envy and I had to leak the recipe to a few people (who all made them and gave high praises, fyi). With so much interest, I thought I should post them ASAP this week. But I just couldn’t get behind tequila on a Tuesday. I’m so old, you guys.

There were a couple different inspirations for this drink. When I redid my site recently, and organized my recipe index, I realized that this blog is seriously lacking in cocktail recipes. There are exactly 3 cocktail recipes on this site (does sangria even count?) and I haven’t made one since 2011. Two thousand eleven. That’s just crazypants.

So it was time.

Then there was this lonely watermelon. Sitting in my fridge. For days. Weeks? Mostly because I was too lazy to cut it up. As I was pondering delicious cocktails, I remembered the watermelon and it was just all uphill from there.

So here it is. The most delicious thing you will drink all summer!

Fresh Watermelon Margaritas

Fresh Watermelon Margaritas

Serves: 2 margaritas
Ingredients
  • ~3 cups fresh watermelon cubes
  • 3 oz tequila
  • 1½ oz triple sec/grand marnier/other orange liquer
  • Juice of 1½ fresh limes
  • 1 tbsp granulated sugar
Instructions
  1. Combine everything in a blender. Blend until smooth.
  2. Serve over ice in a sugar-rimmed glass.

So easy, delicious and PRETTY! Hurrah! Of course you can taste test it and adjust the ingredients to your personal preference. Some people dig the tequila flavor, some people like it more tart and limey… you get the idea. I liked how the sugar rim brought out the watermelon flavor. However, after we drank these, I was thinking about rimming the glasses in chili-lime salt (the kind they sprinkle on watermelon and other fruits at little Mexican stands). I’ve never actually had the watermelon/chili-lime combo but it’s really popular around here so it must be good!!

    I think you’re also channeling your inner Beyonce. “I’ve been drinking…watermellon!” Haha, when I make these I am going to be singing that nonstop. These sound delicious and refreshing!

    If you’re taking requests, my favorite drink of all time is a mudslide! I’d love an at-home version. Any time I’ve made my own, it isn’t nearly as good as the restaurant version.

    So fun!! I don’t have any cocktail recipes at all on my site. I am kind of a fake drinker. Ha! If you catch me with a glass of wine, chances are it is half juice! πŸ™‚ But I want to try these! So perfect for summer!
